Breaded, Fried, Softly Spiced Tofu

Sorry I didn't like this. I think it might have tasted better had the tofu marinated in the broth for a longer time. I added cumin, cayenne and garlic powder but it still tasted under seasoned.

Mango Salsa

I added finely chopped red onion in place of the green onions and a dash of salt. The flavors really come together after it rests for at least an hour. After 4 hrs, it tasted even better.

Cream of Mushroom Soup II

I used a food processor to chop the mushrooms like another reviewer suggested. I pulsed the food processor a few times and the mushrooms turned into mulch. I pulsed a smaller batch of mushrooms and only pulsed once and got smaller edible pieces. I was pretty sad about the mulch but it boiled away nicely and added flavor to the broth so I'll be repeating that step in the future. Also, don't throw away the stems. Just chop them finely and throw them in. Used onions instead of green onions, dill for thyme, added two tsps of cornstarch dissolved in cold water, decreased the amt of butter and used 1/2 cup of half and half. I'll be making this again.

Spinach Balls

This recipe needs a lot of work. As is, it is very bland. I decreased the amount of bread crumbs by a cup and added a ton and it came out very dry and bland. I had only baked 10 to test so with the remaining spinach mixture, I added garlic sauteed in oil, a little vegetable bullion cube and more garlic powder. It still came out bland and dry! I won't be making this again but I suggest sauteeing the spinach and adding all the flavoring and THEN adding it to the bread crumbs. Frozen whole cut spinach works better than chopped and consider covering the spinach balls with foil towards the end of baking to keep in some of the moisture.

Apple Pan Betty

I used 1.5 tbsp of sugar and doubled the cinnamon. I used 2 tbsp of butter to sautee the apple and added a sliver more when adding the bread. Amazing recipe and simple to make.

Spinach Enchiladas

The recipe is bland without adding spices and salt! I used 16 oz thawed spinach, 1 red onion and several cloves of garlic. I added a ton of cumin, paprika, salt, pepper and garlic powder. I suggest tasting the mixture before putting it in the tortillas bc adding the sour cream, etc made it taste a little bland again. I ended up adding a few dashes of hot sauce. I used a 1/4 cup of cheese on top to save on calories. I highly recommend using TJ's enchilada sauce!

Hot and Sour Chinese Eggplant

I used regular eggplant, doubled the sauce and kept the cornstarch the same amt. Everyone loved it. Next time I'll use chinese eggplant and triple sauce.

Eggplant -- Easy, Good and Tasty

So tasty and easy! I wanted to cut down the fat content so I used canola spray to grease the baking sheet. I followed another reviewer's suggestion and I put crushed red pepper flakes and parm cheese in the breadcrumbs. I also added a salt and next time I'll add garlic powder. I baked each side for 10 minutes and then I put a mixture of italian dressing marinated tomatoes, parm cheese and a sprinkle of salt, basil and italian seasoning on top. broiled it for 5 minutes. really good. next time I'll add more topping.

Russian Mushroom and Potato Soup

Perfect. Next time I'll decrease the butter as there was a bit too much floating at the top. I used 1/2c half and half instead of 1 cup and it was the great -not too thick (chowder-like) or watery.

Crazy Cake

This is going to be my go-to recipe from now on. I added 3/4 cup of cocoa and a 1/3 cup of chocolate chips because other reviewers complained it wasn't chocolate-y enough. I also decreased the sugar and used 1 1/2 c instead of 2. It was plenty sweet! I made a big cake and after it cooled, I used dental floss to make two equal sized layers. I filled it and frosted with the Chocolate Ganache recipe that can be found on this site. it definitely takes better the next day and the day after that!

Irish Eggs

Delicious! For 2 servings worth, I used 1 medium potato and 4 egg whites. I microwaved a peeled potato for 4 minutes, cut it into cubes and browned it with onion. I added cumin and green peas while sauteeing and it went really well with the potato/onion mix. Great recipe and super filling! I'll be making again!

Best Cream Of Broccoli Soup

Delicious! I didn't use celery but I added 2 cloves of garlic when sauteing the onions. I used a hand blender to blend the soup, but I only blended a third of it so because I wanted to leave bits of broccoli intact. I added about a tsp of salt, pepper and a half tsp of chili powder and flakes. Next time I'll set aside broccoli florets to add at the end. Great recipe. I'll definitely make this again.

Braised Green Beans with Fried Tofu

This was amazing! Yes the tomato cooked down, but the sauce tasted 10x better with tomato cooked in. Before, it tasted too much like white wine. At the end, I threw in some slices of tomato and put it over a low heat so the tomato could soften. I also added mushrooms, garlic and chili flakes. Delicious!

delicious recipe. i used a can of stewed tomatoes and 2 tbsp of tomato paste because that's all I had. i also added about a tbsp of red pepper flakes bc it wasn't spicy enough and about a half cup of sliced mushrooms. I used shrimp instead of chicken and used panko to bread the shrimp. all in all, a great recipe!

delicious! I eyeballed the mayo (I used nayonaise) to my desired consistency and added 2 tsp of wasabi powder. i added a bit of black pepper and a 2 tsp of black sesame seeds. i will definitely make this again!
