About this Cook
I am a single mom of four. I work full time. So anything I do needs to be quick and easy in the kitchen and suit 4 very different sets of taste buds. This site has helped me come up with some really great meals to suit everyone.
My favorite things to cook
I love to come up with One-dish meals. That way I dont have to lsiten to all the complaining about all the dishes. ;-)
My favorite family cooking traditions
I was allowed in the kitchen with my parents from the time I was big enough to help tear up bread for stuffing. It was always a family affair to make meals. I love the holidays the best because everyone has their own special dishes that they excel at. I have my own children in the kitchen with me know learning at my elbow just like I did with my parents.
My cooking triumphs
I love to cook big meals. I also ussually work with about 20 to 30 men on any one jobsite at a time. (I am an electrician) I was working a shut down at a magor automotive manufactoring facilty one year. The foreman was tired of restraunt food and asked if I could bring something homemade for dinner the next night. We were working 12 hour shift at night at the time. So I went grocery shopping after I got off work and headed to my girl friends house. With her help putting the finished lasangas in the oven after I had assembled them so I could catch a nap before work. I made SEVEN huge roasting trays of lasanga! When I went into work that night I had to have help carrying everything in. I have to laugh! I had 3 marriage propsal that night along with every trade that was working trying to sweet talk me into bringing in more for their crews too! I have always been told that my lasgna is the best now I belive it!
My cooking tragedies
My very first attempt to surprise my Mom by making dinner all on my own. I was about 12 years old. I was trying to make macaroni and cheese out of the box. I had forgotten to drain the macaroni. so we had macaroni and cheese soup instead!

Oranged Cranberry Sauce
This is the bomb! I did change it just a bit. The orange that I had zested I finished peeling it then diced it up into the mix. I didn't have any cinnamon sticks so I substituted ground cinnamon. and even after an hour and half it still wasn't as thick as I thought it should be so I added a couple hands full of dried cranberries to it. Let it simmer for about 10 more minutes and it was perfect! This is a really good recipe that I will use again and again!

Peach Pie
Ok i did this recipe 1. because I was in a hurry and it was the simplest and 2. the beautiful picture. Boy was I surprised!!! It turned out looking exactly like the picture and was the BEST Peach Pie EVER!! I have to admit on the first one I goofed and I used a full stick of margarine instead of half a stick of butter. It was an awesome mistake! I am waiting on the second one to come out of the oven right now to see what it will be like with the original amount. I bet it is just as good.

Easy Roasted Pork
The only thing I recomend to make this recipe better is go easy on the ginger. It is a wonderfully juice roast that is the result. I just made it and everyone was raving about it. Even my garbage gut that will eat anything and not comment was very excited about how good it tasted!
