Caesar Vinaigrette

I'm always looking for good salad dressing recipes because my husband and I eat so much salad. This one had a nice light flavor and wasn't overpowering like some balsamic vinaigrettes. It also had a hint of sweetness along with tanginess, which I like.

Almond Chicken Salad

This is very good if you're looking for a dressing that goes with Asian style salads. I have made this numerous times over the past couple of months, and it's always something I look forward to eating. It may only be me, but I notice it's a bit on the spicy side. I think this is due to the dry mustard. If you don't like the hint of spice, opt for less mustard or substitute. Otherwise, excellent!

Buffalo Chicken Chili

Delicious chili. I made adjustments based on how strict I am with my diet, so I used olive oil in place of butter. Otherwise, I followed the recipe exactly and it was incredibly good. I like that it's thick and substantial yet very healthy at the same time, so you're full when you're done but don't feel guilty because it's so healthy.

Pumpkin Black Bean Soup

This is one of my favorite recipes, I'm so glad I found it. It is a hearty, satisfying fall/winter soup. Even if you're a little turned off by the word 'pumpkin' and 'soup' in the same sentence, give it a try. The pumpkin is not overpowering, and the way it blends with the black beans is really delicious. My husband was skeptical when I told him what I was making, then as he was eating he couldn't stop saying how good it was.

Cold Black Bean Salad

I love this salad. It is fresh tasting and healthy and makes a great side dish. It's a unique way of using beans if you're not in the mood for baked beans, etc. I like the tanginess of the tomato and vinegar.

Peanut Butter Bars I

Baked Potato Dip

Great appetizer dip to eat with potato chips or vegetables. I like that it was easy to make and required very little effort and absolutely no preparation, because sometimes you don't have time to make anything too involved.

Antipasto Pasta Salad

This is the best antipasto salad I have ever had. I made it for a bbq this summer, and I doubled the recipe. By the end of the night it was all gone. Incredibly tasty and rich with the cheese and salami. I used tortellini instead of plain pasta shells. Fabulous.

Lentil Soup with Lemon

This soup was hearty and delicious. I'm always looking for healthy recipes so my husband and I don't get tired of eating the same things. I'm definitely adding this one to one of our favorites. I like the addition of the lemon juice and cilantro - it really gives this soup an extra kick.

Roasted Brussels Sprouts

Delicious! This was the first time I'd ever eaten brussel sprouts, so I wasn't sure I would like them, but they were very tasty and easy to prepare. It's nice being able to add a healthy recipe to my collection.

Absolutely Fabulous Greek/House Dressing

Despite the list of simple ingredients, this salad dressing was delicious! Both my husband and I loved it, and he told me to save this recipe. It has an authentic, fresh taste and was great on a salad with tomatoes, feta and cucumber.

My Grandmother's French Dressing

Tasty! It's nice to be able to enjoy a creamy dressing that isn't high in fat. I don't use sugar in order to lower the calories. In its place I use a little bit of honey and the rest of the sweetness comes from stevia. It's probably not as thick as the original recipe, but the taste is still great.

Roquefort Pear Salad

Yummy. I have made this salad several times in the past couple weeks. I actually didn't add the pears since I'm not a big fan of pears. Instead of Roquefort cheese I used feta, and in place of all the sugar I toasted the nuts with a little spoonful of honey. Overall a delicious salad.

Orange Vinaigrette

I followed the recipe exactly except I added a little bit of olive oil and used frozen orange juice concentrate. It had a really nice, light balsamic flavor that went well with toasted almonds and feta cheese. I'll definitely make this again. Thanks for sharing!

Italian Dressing Mix

This had a really good flavor! To me it was similar to the pre-made Italian dressing packets you buy in the store, and this is a much cheaper alternative. The only thing I would change when I make it next time is to not add as much salt. It tasted too salty to me, and this was even without adding garlic salt (I used garlic powder). Otherwise, tasty!

Teriyaki Turkey Meatballs

My husband and I both enjoyed these. I used extra lean ground turkey which I was surprised to find has less fat than chicken. I'm sure the extra fat adds a lot more flavor, but we're always trying to eat healthy, and these were tasty.

Almond-Crusted Halibut Crystal Symphony

I haven't yet eaten this recipe exactly as it's written, as I wanted something healthier and made it without any butter, but even the healthier version tasted great - it was rich and you felt like you were eating something decadent even though it was healthy. I substituted a little olive oil in place of the butter, and instead of heavy cream I used fat free half and half. I used a combination of almonds and corn flakes in place of the bread crumbs. I liked the way the flavor of the sauce blended with that of the fish. The crunchy coating on top of the fish was also delicious.
