Luscious Four-Layer PHILLY Pumpkin Cake

I screwed this recipe up in several places and it still turned out great! I ended up making the yellow cake mix according to the directions (high altitude) on the box and added an entire can of pumpkin to the batter. I baked it in a bundt pan, and it came out perfect. I made the frosting without the pumpkin since I had accidentally used it all in the cake mix - still tasted great. I only made two layers of frosting - one in the middle and one on the top. I poured carmel sauce over the frosting and then topped with chopped pecans. It looked and tasted fabulous! My guests were even taking pictures of it!

Sausage Egg Casserole

Kosher Salt Encrusted Prime Rib Roast

This was excellent! I made a 2lb. roast and had it in the oven for 2 hours - until the thermometer read 138. I let it rest for 1/2 hr. and it was perfectly pink. The only problem I had was with the salt. I think since the cooking time was considerably shorter than the recipe called for, the salt didn't have enough time to form a solid crust. I scraped off as much as I could, but the edges were still pretty salty. Will make again though... maybe with a bigger roast. (I also used "wet" salt.)

Chocolate Banana Cream Pie

This turned out fabulous and it was so easy to make! My husband says it's even better than regular banana cream pie... that's HUGE! I used a graham cracker crust, but next time I'm going to make a Ritz cracker crust. I made this a day ahead so I dipped all of my banana slices into lemon juice and then put them on a paper towel to drain. They still looked great today and didn't have any lemon flavor. I topped the pie with shaved chocolate swirls - so pretty! Can't wait to make this one again!

Chicken Rice Balls

This recipe was pretty good... not a favorite, but I'd make it again. I used a pound of ground chicken breast and that was way easier than using chicken breasts and cutting them up.

Baklava

Awesome!! I made 50% more sauce, and they were dripping... but it was sooo good! Friends said they liked it better this way because they were so much more moist than others they've had. I used a variety of pecans, almonds, and walnuts.

Janet's Rich Banana Bread

This was AMAZING! Just the recipe I was hoping it would be! I doubled it, used 6 frozen, ripe bananas (squeezed some of the excess liquid out), and added an extra 1/4 c. of flour. I divided the batter between two loaf pans, one larger and one a bit smaller. The smaller loaf came out perfect, but the larger loaf sank quite a bit in the middle. I might try adding even more flour next time. Can't wait to make it again! *1/2012 - I added 3/4 c. of flour this time and both loaves came out perfect. *8/2012 - Added 1/2 c. flour... both loaves sank!

Great flavor, but mine really sank in the middle due to altitude. I'd try them again, but I'd have to play with the amounts of sugar/flour/baking soda. Much more like a cake than a bar.

Garlic Broccoli

This was really good for broccoli! I only used one clove of garlic, put everything in a glass measuring cup, covered it with plastic wrap, and microwaved it for 2 1/2 minutes. Very good!

Peanut Butter Vegetable Chicken Soup

Delicious! I made this exactly as the recipe reads and added a pinch of cayenne pepper. It really does get better as leftovers! Thanks for the recipe! 9/12 - This time I sauteed the chicken pieces in olive oil, salt, and a generous amount of lemon pepper. While the chicken was cooking, I added an onion, 2 carrots, and 2 stalks of celery. Afterwards, I added the chicken broth and potatoes and brought everything to a boil for 10 min. before adding the rest of the veggies.
