Walnut-Coconut Coffee Cake

Amazing. I made it twice in one week. My boyfriend loves it. It is fluffy and moist and oh so easy to make. I have also tried it with crushed almonds and dried cranberries with a bit of almond extract instead of the walnut and coconut.

Creamy Split Pea Soup

Really really delicious with the modifications I made. I added 3 cloves of garlic. Most importantly, I used only 3 slices of bacon, half a cup of ham, and half and half. It was still so rich and decadent, but at least slightly less high in cholesterol. When a meal can still be rich and flavorful with a few, health-minded changes, I always support doing that. Try it this way, and if you really think it needs more richness, go for more bacon and full cream. Served with toasted fresh bread and a salad. Yum!!! Thanks for the recipe.

Pizza Crust II

This was relatively easy and oh so good. It freezes well, but I would suggest cutting the recipe in half for a first try. It is a lot of work to play with such a big dough ball. I replaced the margarine with 1 tablespoon of olive oil and also sprayed with PAM to avoid stickage to the bowl(for rising)/plastic wrap (for freezing). I made an artichoke/olive/tomato/onion/fresh mozzerella pizza and an spicy italian sausage/roasted red pepper (from jar)/fresh mozz/onion pizza. Both with fresh roasted garlic tomato sauce. Major crowd-pleaser. THANKS!

Mrs. Sigg's Snickerdoodles

I have made these few times. While Snickerdoodles aren't my favorite cookie, it's a crowd-pleaser and this recipe IS my favorite for snickerdoodles. Others don't add vanilla... but this is essential! One adjustment: Add 2 teaspoons of cinnamon to the egg/sugar/butter mixture if you want the cookie to have more of cinnamon taste. These normally come out as sugar cookies with a hint of cinnamon (which is also GOOD!)

Coq Au Vin, My Way

Didn't expect to like this because it is so NOT a true coq au vin. I was in a bind to make something interesting with limited ingredients available. I LOVED this. I had the chicken, onion and garlic but that was it. I used half merlot and half madeira and used canned tomatoes. Did not add the cream or gruyere. It was already very fatty (as a coq au vin should be anyway) so I don't think the cream and cheese are really necessary but I may try it! Served with mashed potatoes and garlic broccoli, though I also think it would be nice with rice. THANKS!

Cut the sugar to a fraction of the amount called for, but other than that, this recipe is PERFECT. Our friends' one-yr-old couldn't get enough either!

Shrimp and Mango Bruschetta

Perfect! I added cilantro, as was suggested. I also used frozen mango chunks which we have at home for smoothies. This was so good, I wanted to log-on to allrecipes to rate it before dinner was even over! This would also be good over an arugula or watercress salad as a first course.

Best Ever Blueberry Cobbler

HUGE hit. I made this last night for guests. I had leftover blueberries and strawberries from earlier in the week that would soon spoil and I wanted an easy way to use them. WOW. Huge hit, super simple to make. I made no alterations (other than using the strawberries as well) and it was perfect.

Risotto with Tomato, Corn and Basil

Excellent! I used canned corn because it is winter! I also used monterrey jack cheese (I know it sounds weird but I have a favorite restaurant that makes a jack risotto that we loooove... try substituting jack for the parm). Came out soooo well. Thanks for this excellent idea. A low budget crowd-pleasing side dish.
