Real Hummus

I am so addicted to this recipe, I make it at least once a week. However, I add at least 3 minced cloves of garlic (hummus is all about the garlic!) and as another poster mentioned, 3 heaping tbs of tahini, and 1/2 tsp of salt. A definite keeper, thank you!!

Oh-So-Good Chicken

This is delicious. I added chopped tomatoes, a can of black beans and 1/2 packet of taco seasoning, after worrying about the taste being a bit bland. It won over my husband! I served with blue chips and Hubby suggested that next time using this casserole as a filling for a flour tortilla for burrito style dinner!

Pesto Turkey Burgers

These were the best burgers I've had all summer! Definitely a keeper. I followed the recipe as is and topped the burger with mayo and julienned sun-dried tomatoes. Delicious!

Spicy Slow Cooker Black Bean Soup

WOW. This was fantastic, and I'll be making it many more times. After spooning into bowls, I loaded it w/ chips, sour cream, cilantro and mild cheddar. Yum!

Smothered Mexican Lasagna

This was really good and everyone liked it, but I didn't have taco seasoning on hand so I used fajita seasoning. It still tasted great, and I couldn't believe how quick it was to make.

Blue Cheese and Dried Cranberry Tossed Salad

I made this salad with a couple adjustments. I didn't have cuke, so I added some sliced red onion and also some apple chunks. It is now my absolute fave summer salad. Try adding blueberries, also, it's a great salad for fruit and the balsamic tastes great with it all!

Taco Pie

This is a great and quick casserole! I used half the chips (I felt an entire bag was too much) and added Rotel diced tomatoes w/ peppers and Pinto beans. I also used half a container of sour cream, but after eating it, I thought it could use more. Will def. make again!

Chicken Chimichangas with Green Sauce

WOW, this is the best recipe I've tried in a very long time. My husband, who loves chimis from a favorite Mexican restaurant said that these were definately restaurant quality. I followed the recipe as is; I used Louis Rich Grilled chicken strips and shredded them, and used whole wheat tortillas. The sauce I thought was different, but it really does compliment the chimis. So easy and delicious, and can't wait to make this again!

Chicken Pesto Pizza

Wow, FULL of flavor. This is the first time I tried fontina cheese, and I loved, it's perfect for this pizza. I suggest using marinated artichoke hearts, they were just awesome with everything else on the pie. This will definately be made again!!

Amy's Garlic Egg Chicken

Wow, great flavor. I added a tbsp Less of butter and added a few more cloves of garlic, as I can't get enough of the stuff. Yet, the chicken wasn't too garlicy, it just had a great taste and juicy!

The first time I made this, I thought is was too sweet, and my husband commented that it tasted like cough syrup. The second time I made this, I halved the amaretto, and it turned out much better. A splash of ginger ale or Sprite wouldn't be a bad idea either.

Sugar Snap Peas with Mint

I didn't have any green onions, but liked this anyway! Great fresh taste, you don't taste the mint right away, it kind of creeps up on you, and gives a great after-taste. Will make many more times, with the onions added.

good base recipe that I have used for a while! I use equal parts ground beef and sausage, fresh garlic, and add a half packet of fajita seasoning for a kick of extra flavor.

Onion Pasta

This is really good, I used three large onions, which was plenty, and some fresh garlic. When I heat up the leftovers tomorrow, I will saute some mushrooms and add to the mix. Can't wait!
