About this Cook
I've been married for 35 years and have 3 children and 4 grandchildren. After losing 134 pounds in the past year, I am now a certified health coach helping others lose weight and get healthy. I am active in my church.
My favorite things to cook
I love to cook when I have time to fuss. Trying new recipes is fun for me, and I've gotten some wonderful ones from Allrecipes.com! I love to cook (and eat) Italian food, and I love good chocolate desserts.

Cool-as-a-Cucumber Avocado Dip
I followed the advice of others and skipped the mint (may try it another time . . . ). I thought this was quite good - very light and creamy! I served it with cut-up raw veggies for a delicious and healthy appetizer.

Best Brownies
Easy and delicious! I doubled the recipe and baked this in a 9x13 pan. I stirred everything in instead of using the mixer to make sure the brownies would come out fudge and not cake-like. I baked the brownies for 25 minutes and they were perfect - moist and slightly chewy. For the frosting, I followed the suggestion of others and only used half of the recommended amount of powdered sugar. I spread the frosting on top of the brownies shortly after they came out of the oven and it made a nice glaze.

Overnight Apple Cinnamon French Toast
This is easy and delicious! Like others, I thinly sliced fresh apples and lightly sautéed them in a little bit of butter instead of using canned pie filling - they were perfect! I also used whole wheat bread (16 slices, fitting 8 to my pan and then adding a second layer of bread). I increased the eggs from 6 to 8 so that each serving had the equivalent of one whole egg. I baked it for 75 minutes to make sure it wasn't soggy. Adding real maple syrup and broiling for two minutes was a nice touch - really finished it off!
