Best Carrot Cake Ever

This is a really moist, dense, and flavorful cake. And not too spicy, since some carrot cake recipes call for nutmeg and allspice. I added unsweetened shredded coconut too and made it in a 13X9X2 inch pan, which made it super easy but added about 10 minutes to the baking time.

Peanut Butter Balls VIII

Loved these. I made these with instant oats. My toddler loved them. I have a hard time getting him to eat anything so consequently he is underweight. These are nutrient dense and tasty. You could play around with adding chocolate too. Important to note they do need to be refridgerated since there is dry milk in them.

Libby's® Pumpkin Cranberry Bread

Easy good and didn't change a thing other than using chocolate chips (semi sweet) instead of cranberries. Put them in the flour mixture before adding to the wet ingredients so they didn't sink to the bottom. So so good. You wouldn't think pumpkin and chocolate is good but it is. You can actually find this exact recipe on the Libby's website that is twice as large and they give directions for substitutions like chocolate instead.

Cherry Snowballs

I really liked these maybe because one of my favorite foods as a toddler were marachino cherries. I didn't wrap the dough around them I just made a thumbprint and then put the cherry on top backed and then let cool and dunked the top in the frosting then the coconut. Really good. Sweet too so be warned. I think these would be good dunked in white or dark chocolate too.

Outrageous Chocolate Chip Cookies

I made these for my toddler who liked them very much - used Kind Arthur white whole wheat flour for a bit more nutrition. Cut the sugar and the chocolate chips a bit too but still tasty.

Balsamic Roasted Pork Loin

It goes without saying don't make this if you don't like balsalmic vinegar, olive oil, or steak seasoning. You won't like it. But if you do like those things, this is a great easy recipe. But like most simple recipes the quality of ingredients really does matter quite a bit. So spend a bit more and you will be that much more impressed. If using cheap balsalmic I would add a bit of sugar to this mix as well to take out the bite.

Cinnamon Chocolate Cake

I really liked this cake. I used cooled coffee from my morning joe in place of the water and it really perked up the chocolate taste. Frosted with a cream cheese frosting, which I think paired well with it. A chocolate icing would have been to much chocolate (is there such a thing?) for me.

Honey Bun Cake I

So yummy and easy. I used a french vanilla cake mix with pudding in the mix. I also made a mistake and didn't read the directions very well and added all the ingredients but it still turned out great.

Cherry Bars

Didn't change a thing and was so good. Just the right level of sweetness and very easy. I think it would be really good with whipped cream or icecream. Different pie fillings could be used but maybe not always almond extract. I am thinking blueberry and maybe lemon? Strawberry and orange?

Whole Wheat Beer Bread

Really good and easy. Used king arthur "white" whole wheat flour for all the flour (3 cups.) Also used Heffeweizen beer. Topped with 2 tbls. melted butter and used convection toaster oven at 325 for about 35 - 40 minutes. Came out moist and flavorful. If top starts to brown too much before it is done tent a bit with aluminum foil.

Mom's Zucchini Bread

This is good and basic and turns out well. Made as is and didn't drain the zucchini yes you do need the moisture from it otherwise it will be too dry. I was a bit worried at first when mixing it up because the batter was so think I thought it needed some sour cream or milk or even water but as long as you keep from draining the zucchini it will be fine. Do make sure to bake at 325 not 350 since it needs the lower temperature to bake correctly.

very good and really pretty easy. I also did half and half butter/olive oil. I also pounded the chicken breasts to 1/2 inch thickness. Don't skimp on the cream - really makes it so good and of course rich.

Easy and great flavor. I made them into bars by spreading in 13X9 pan and baking at 350 for 25 minutes because I do not have the time or patience anymore to make cookies! I sprinkled the cinnamon sugar mixture on top. They turned out great.

Monkey Bread

So good! Easy too. I used a bundt pan since I think a tube pan would have leaked all over the oven. Also used two cans of 16 oz jumbo buttermilk biscuits. Accidently got low fat ones and it still worked. Had plenty of ooey gooeyness. I think the folks that ran out of the sugar mixture maybe used instant pudding. That has much less than the cook and serve. You have to use cook and serve.

Beer Margaritas

So simple so good. Great base recipe. I used Coors beer and it was great. I think I added just a bit more tequila but I like my margaritas to pack a punch. Floating a bit of orange liquor isn't a bad idea either - gild the lilly.

Seven Layer Salad

Really liked this a lot but how can you not? It has BACON in it! I too did half mayo/half sour cream but jut mayo would have been good too. I think the next time I make it I won't use iceberg but will maybe used mixed greens. I took this to a preThanksgiving feast and it was a hit. Thanks!
