Shortbread Meltaways

They do melt in your mouth but they do taste of flour and cornstarch. Different ratios of butter/sugar/flour are in order here. Important to follow directions and let them set on the cookie sheet before removing or they will fall apart. If you use unsalted butter add a bit of salt because it does help with flavor. Maybe using regular sugar would help instead of powdered since powdered sugar also has conrstarch.

Libby's® Pumpkin Cranberry Bread

Easy good and didn't change a thing other than using chocolate chips (semi sweet) instead of cranberries. Put them in the flour mixture before adding to the wet ingredients so they didn't sink to the bottom. So so good. You wouldn't think pumpkin and chocolate is good but it is. You can actually find this exact recipe on the Libby's website that is twice as large and they give directions for substitutions like chocolate instead.

Ocean Spray® Oatmeal Cranberry White Chocolate Chunk Cookies

As written this is not very flavorful and dry. The ratios of butter to dry ingredients are off. I changed it to increase the butter, plumped the cranberries in orange juice and added that mixture once cooled to the wet ingredients so as not to cook the eggs. I also added a tablespoon of freshly grated orange zest. Those cookies turned out great but that is not this recipe. I also used quick cooking oats too - blends much better.

Cherry Snowballs

I really liked these maybe because one of my favorite foods as a toddler were marachino cherries. I didn't wrap the dough around them I just made a thumbprint and then put the cherry on top backed and then let cool and dunked the top in the frosting then the coconut. Really good. Sweet too so be warned. I think these would be good dunked in white or dark chocolate too.

Sour Cream Coffee Cake

Very basic but good and easy. I used a dinner knife to spread the batter in the pan - otherwise is can be hard to get it spread evenly. Don't bother using low fat ingredients. It just won't be worth it - have a smaller slice of the real thing. I am however, thinking of modifying this for my toddler. (He needs the calories but needs to be nutritious.) Using whole milk plain yogurt instead of sour cream and whole wheat pastry flour (or white whole wheat flour from king arthur) and adding a bit of wheat germ to the topping.

Spinach Salad with Warm Bacon-Mustard Dressing

This a great but I wouldn't say it is quick to make what with having to make bacon, hard boil eggs, and chopping stuff. I would also say you should double the dressing recipe and be sure to use quality ingredients for the vinegar and mustard. Simple dressings require top notch ingredients to really work well. I also think four servings is crazy. This makes at least 8.

Outrageous Chocolate Chip Cookies

I made these for my toddler who liked them very much - used Kind Arthur white whole wheat flour for a bit more nutrition. Cut the sugar and the chocolate chips a bit too but still tasty.

Balsamic Roasted Pork Loin

It goes without saying don't make this if you don't like balsalmic vinegar, olive oil, or steak seasoning. You won't like it. But if you do like those things, this is a great easy recipe. But like most simple recipes the quality of ingredients really does matter quite a bit. So spend a bit more and you will be that much more impressed. If using cheap balsalmic I would add a bit of sugar to this mix as well to take out the bite.

Pineapple Coconut Squares

These were easy and good. I too added about 1/2 tsp. salt to the crust - it really does make a big difference. You have to really work to get the crust ingredients blended. I also cut the sugar to 3/4 cup and it was just the right sweetness to me but if you like sweeter and I think one cup would be fine.

Cinnamon Chocolate Cake

I really liked this cake. I used cooled coffee from my morning joe in place of the water and it really perked up the chocolate taste. Frosted with a cream cheese frosting, which I think paired well with it. A chocolate icing would have been to much chocolate (is there such a thing?) for me.

Mom's Coleslaw

Very mild and bland and a bit sweet but my husband liked it - he is that kind of guy. I like a bit more tartness so would have to cut the sugar, increase the vinegar and maybe add some garlic and onion powder. Some celery seed would be good too. I'll keep this on file for the hubby but keep looking for one I like.

So yummy and easy. I used a french vanilla cake mix with pudding in the mix. I also made a mistake and didn't read the directions very well and added all the ingredients but it still turned out great.

Cherry Bars

Didn't change a thing and was so good. Just the right level of sweetness and very easy. I think it would be really good with whipped cream or icecream. Different pie fillings could be used but maybe not always almond extract. I am thinking blueberry and maybe lemon? Strawberry and orange?

Bake Sale Lemon Bars

I think these were a bit to floury for my taste. Maybe would have liked the filling better if it was made with cornstarch. I barely had enough dough for the base but it just made it. Really should have more filling too - made as the recipe states it isn't enough. Also, I dusted with powdered sugar, didn't refridgerate and it turned into a syrupy mess. I think putting in the fridge might have prevented it? The taste was OK but could have been a bit tarter.

Gooey Butter Cake III

Super easy and tasty. I think 3 cups powdered sugar is plenty - 4 would have been too much even for me and I have a sweet tooth. I used a lowfat cream cheese because that is all I had and it still turned out. Take a look at it after 30 minutes then add bake time as needed. My oven took about 40. This might be good with almond flavoring (maybe a little less than 1 tsp since it is a strong extract - maybe 1/2) with maybe some coconut and nuts in the crust. Cool to play with.

Hot Water Chocolate Cake

Took five extra minutes to cook but this cake has great flavor! Also, used a heaping 1/4 cup cocoa for flavor punch. I usually add a bit of instant coffee to most chocolate cakes/brownies I make and I did to this one too - about 1-1/2 tsp. Really does a lot to intensify the chocolate flavor. Iced with a cocoa/butter flavor crisco icing and was really really good. I make a similar cake that calls for two sticks of butter - obviously that one is a bit more decadent. The texture on this one was a bit more "fluffy."

Delicious Raspberry Oatmeal Cookie Bars

Such a basic recipe and really surprisingly good. I think it could use a bit of spice - maybe some cinnamon. I used apricot fruit spread because I didn't have raspberry and it was really good. I also had no butter so used butter flavored crisco with 1 T. water and it still worked. Used King Arthur "white" whole wheat flour for added fiber! Will make again but might add nuts to the mix next time.
