About this Cook
Living in Seattle Washington lends itself well to having hobbies that keep you indoors such as watching movies, reading, and of course, cooking and baking. But the rain doesn't keep me indoors all the time. Hiking, biking, and running in the rain can be a lot of fun too. The smell after one of our Northwest down pours can't be beat! But now that I have a husband and a one year old time for hobbies is rare!
My favorite things to cook
I love to make all sorts of baked goods but am starting to enjoy making dinners for family and friends. One dish dinners are especially good. It frees me up to spend time with guests! But I do love to experiment with cuisines from around the world. I have yet to be able to match what I can get at local restaurants but I'll keep trying. Too bad my husband likes about 10 things, all boring meat and potatoes type stuff!
My favorite family cooking traditions
Being German, Swedish and Norwegian means growing up with lots of lefsa, lutefisk, and brats. But living in Seattle has exposed me to all sorts of different foods including middle eastern, asian, morracan and indian foods.
My cooking triumphs
The first time I tried to make yeast bread was a total success. I couldn't believe I didn't end up with a football.
My cooking tragedies
The first time I tried to stir fry a dish was almost a total tragedy. I put the wok on high, added oil and flames just shot up! Of course, I saw fire and thought adding water would be a great thing. Not for grease fires for sure! I decided it might be best to leave stir frying for take out only from then on.

Gingerbread III
I really liked this recipe the ratios worked perfectly and the texture and flavor are great. I did make it once using oil instead of vegetable shortening once only because I was being lazy and measuring out vegie oil was easier :-) and it still turned out fine. Slight difference in texture but still good and cake like. Not too sweet so you can certainly add a sweet frosting or glaze to this if you wish but a good not too sweet snack cake for the kids too. It also double well the ratios make it really easily done.

Mom's Zucchini Bread
This is good and basic and turns out well. Made as is and didn't drain the zucchini yes you do need the moisture from it otherwise it will be too dry. I was a bit worried at first when mixing it up because the batter was so think I thought it needed some sour cream or milk or even water but as long as you keep from draining the zucchini it will be fine. Do make sure to bake at 325 not 350 since it needs the lower temperature to bake correctly.

Downeast Maine Pumpkin Bread
Made as is no substitutions and turns out perfectly. No need to mess with it and nice it uses one whole can of pumpkin so I don't have to figure out what to do with a partially used can of pumpkin.
