Grandma's Chicken Chardon

Very good choice for the family rotation. I agree with others that the cooking time is a bit too long and doubling the egg and the butter/lemon is a great idea. I butterflied my chicken breasts so cut the time down significantly. Don't skip the mushrooms...they are the best part!

World's Best Lasagna

Very good recipe. Everyone is correct in that this makes an incredible amount of sauce. I like a saucy dish, but you will have to store the rest as to use it all would make it soup. The second time I made this recipe I substituted half of the sausage with spicy italian sausage and it proved a positive adjustment. Also, the directions for stacking the layers seemed a bit odd so I just winged it and ended up with an extra layer or two. Good flavor, but with a small kick from the spicy sausage, a much bigger hit with our family.

Bird Seed Squares

Very good and relatively speaking, healthy, treat. I didn't have any problems with the mixture being too dry or crumbly as some have reported. The only changes I made were: only 1/2 cup of brown sugar instead of 3/4 cup and I didn't have many sesame seeds so I substituted flax seeds for most of the sesame. I also used a mixture of smooth and crunchy peanut butter.Packed it tightly into a 9x13 using a rubber spatula then cut and stored them between layers of wax paper and put in the frig. Fun snack I hope the children will enjoy as an after school treat.

Waffles I

Good base recipe, but you truly have to double the sugar and vanilla or it will have zero flavor. I put triple the vanilla and added cinnamon. In an attempt to pump up the health factor I substituted 1/2 the flour with whole wheat flour and I would not suggest a repeat of that adjustment. Just doctor it up a bit and you will like it.

Whole Grain Breakfast Cookies

Fantastic ,healthy option as a treat for the family. My teenagers and husband loved them. I had to substitute peanut butter for the almond butter because they have a tree nut allergy. Also, added an egg so they wouldn't be crumbly. They came out perfect and I will definitely be making them again.

Zucchini-Chocolate Chip Muffins

Fantastic! Children and husband loved them. Per some suggestions, I made the following adjustments: substituted 1/4 cup unsweetened applesauce for half of the oil, Used 1 cup regular flour and 1/4 cup whole wheat flour and 1/4 cup flax seed meal. Also substituted 1/2 cup brown sugar for the white sugar. They were plenty sweet without the extra. I suggest grating your zucchini on paper towels and blotting to get rid of some of the moisture before blending. I will be making another batch tomorrow because they have already disappeared!

Lite Coconut Cake

Wonderful Cake. The only adjustments I made were the following: I used lite coconut milk as others suggested to replace the water in the cake mix. I used a Pillsbury sugar free cake mix. Purchased some red mill unsweetened coconut and replaced 1 cup of the sweetened. I also reduced the sugar to just barely over 1/2 cup for the frosting. Made it on Wed and served it on Friday to my diabetic Mother and Grandmother. They loved it, as did my husband and picky children. We will make this again!

Coconut Cream Pie

Absolutely wonderful recipe. My husband loves it as I am sure will the children when I surprise them after dinner. I added 1/4 cup extra coconut and roasted some to top with but other than that followed the recipe exactly. I have never made a coconut cream pie before but see no reason to ever try another recipe. Grandmother's Oatmeal Cookies

Positively the BEST! My family gobbled them up as fast as I could make them. I used unsalted butter instead of shortening and had to omit the walnuts due to an allergy but all else was the same. Just fantastic, even without the nuts! My husband is not a fan of sweets and could not keep his hands out of the cookie jar :)

Corn Fritters

I used fresh corn shaved off the cob and added a bit more than the recipe called for. Added a bit extra sugar also (1 Tbsp). They were very good but everyone agreed they should be sweeter. This recipe makes a lot of fritters so I saved 1/2 the batter and added another Tbsp of sugar and very lightly dusted with powdered sugar before serving. Much better with the extra sugar - and we are not a heavy sweets family.
