Hot Tamale Pie

Made it for the family for Christmas eve dinner. Everyone loved it, and I was told I could make it again and again. Lots left over as it turned out way bigger than I expected. I am sure it will taste even better reheated.

Bananas 'N' Cream Bundt Cake

sooo good, and so easy to mix up and bake. follwed directions exactly and the cake was perfect. i know the poster said no icing needed, but as i was making this for Easter supper, i wanted it to be a little fancier, so i found a peanut butter glaze recipe on here and drizzled that over it. omg, to die for. this is going in my recipe box for sure, and may just replace the banana bread recipe i have as this is certainly a dense enough cake to have in place of banana bread.

Cinnamon Griddle Cakes

omg! first let me say that i really dislike pancakes, always have. i am the odd one out from my family who all love them! but when one of my daily emails had this recipe, something made me want to make them. so i did, for x-mas breakfast. i made them as written, although i used honey instead of corn syrup because i had forgotten to pick some up. also, since i prefer my cinnamon buns with a cream cheese icing, i cut the sugar amount in the icing in half, added a lot more milk, and added a package of cream cheese. although i still dislike traditional pancakes, i will make thiese any day. loved them! my family also loved them, and they are pancake eaters, so they should know. yes they are thicker than what i am used to seeing, and the are also fluffier, but that is why i think i liked them so much. they are thick enough you could slice them in half, put a few slices of bacon in there with a bit of the icing, and have the best griddle sandwich ever! this is going in my recipe box for sure.

Sweet and Tangy Sauteed Collard Greens

this was so good!! first time ever having collard greens, and i am glad this was how i chose to try them. i decided to make a 2 serving batch for my meal, having it like a hot salad with some salmon on top. because it was my meal, i added some shredded carrots half way through the cooking. unfortunetly i didn't have balsamic vinegar, so i used apple cider. it was so tasty. and so fast. highly recommend this recipe for those new to collard greens.

Citrus Salmon in Parchment

with the same ingredients listed, but a few tweaks in how they were used, this turned out wonderful! what did i do differnt? i only used half of each fruit for the garnish, meaning i sliced it really super thin, as really it's not there to eat, it's just meant to look pretty. the other half of the fruit, i jusiced into a little bowl. i actually chopped the dill fine and added that to the juice. before putting the slices on, i spooned the juiice/dill mixture over the salmon, which i had made a few cuts in to allow the juice to penetrate into the salmon more. i cooked it as directed, and it came out looking beautiful, and tasting really good. only gave it 4 stars because i had to change some of the production to make sure my salmon actually had a citrus flavour.

mmm, this was so good. warm and hearty on one hand, and yet light and refreshing on the other. i bet this would make a great cold soup too.
