Born and brought up in Scotland , lived and worked there for many years as a deep sea diver, then moved abroad to work overseas, retired early and moved to live in Portugal, mainly for the good weather, but as my passion is gardening and cooking, i could not have picked a better place, the Fish and Vegetable markets around where I stay are second to none, with a great variety of fantastically fresh produce,

Love cooking seafood, fish, pork, and chicken
My favorite family cooking traditions
Very famous for any type of home made soup, also a traditional Scottish dishes, like haggis, neeps and chappit tatties, also another Fife favourite called Stovies,
My cooking triumphs
After i retired my wife bought me as an anniversary present a 12 week cookery course called "Dining with a Difference" at a local college, this certainly helped me become a more confident cook,
My cooking tragedies
My time management used to let me down, and many things used to be well done/burned, but since the college course this is no longer the case,

Fig and Banana Loaf
Yes it was superb, nice and moist, turned out a treat, I have 23 fig trees and need every fig recipe I can get my hands on, I also sliced some figs and laid them on the top before putting the tins in the oven, lovely , will certainly use this recipe again,

Spicy Stuffed Squid
Fantastic , As fresh squid are readily available and at a reasonable price at the fish markets and supermarkets in Southern Portugal, I have tried it twice now in the last two weeks, and recommend it, I use chilli flakes instead of red pepper flakes as i like things to be spicy, mmmmh! very filling
