Black Bean Chili

yummy! I didn't bother with the cumin and just made it hot (as opposed to spicy). Lots of peppers, lots of cayenne=yum yum yum! tastes great the next day too!

Dee's Mexican Rice

delicious! I killed the spiced that were listed, except I added more cayenne. I also used lots of peppers (asstd kinds) and lots of tomatoes and black beans. it's a meal in itself when you do it that way! I drizzled it with lime after I cooked it to make it lighter and fresher tasting. also, if the ketchup taste bothers you, use a little bit of tomato paste instead...I make this at least once every couple of weeks!

Best Guacamole

Very good! but I added to it with fresh chopped jalapeños, red bell peppers, roma tomatoes, corn, and a bit of chopped iceberg lettuce. And I substituted lime for lemon! of course! it has become one of my staples and i make it by habit! rave reviews from everyone I know, including my eighty year old english grandmother who doesn't like anything but meat n' potatoes!

Mexican Rice

excellent recipe, but use a non stick pan so you need barely any oil...and you'll have to get more creative with the additions to the rice, or it's a little bland. I added corn, jalapeno, anaheim, and red peppers, zucchini, and extra tomato, black beans, and hot sauce to the mix. I served it with sour cream on top and drizzled with...lime!

Best Big, Fat, Chewy Chocolate Chip Cookie

I don't usually believe people's reviews, but these were incredible! My cranky mother who doesn't like anything EVER said that these were the best she ever had! I had to cook them for a bit more than 15 minutes to get them to keep a shape, tho

Black Bean and Salsa Soup

I loved this soup! The only thing is that it's way too watery...I put half the amount of broth and it was still a bit too watery for me. Also, I didn't use premade salsa, but instead used three roma tomatoes, an onion, and three kinds of hot peppers, and seasoned with chili powder! don't put all of the beans in the blender, for thicker, more "chewable" soup...very very tasty! it's a keeper!!! oh...and I DID use a whole lime, too :D
