Broiled Tilapia Parmesan

Tasted great and was very easy... will definitely make this again. The only thing I had trouble with was getting the cheesy coating "spread" onto the fish. I ended up kind of spooning it on in globs, so it wasn't as pretty as maybe it should have been. Also, if your tilapia fillets are thin, you should forgo trying to brown the topping... just broil until the cheese melts.

Asparagus Quiche

So easy! I steamed the asparagus the night before, used that great new bacon that goes right in the microwave and used frozen pie crusts. This recipe made 2-9" quiches. Friends have asked for the recipe. Finally, a quiche recipe with no onions... hooray!

Oatmeal Chocolate Chip Muffins

Great muffins! Easy, pretty and tasty! Hard-to-impress friends asked for the recipe. I doubled the chocolate chips and the recipe actually made 18 muffins.
