Melissa's Kale Salad

as it happens, i was elbow deep in preparing this salad when unexpected guests showed up at our front door. i created pretty photos and served it up for lunch, and they all begged for the recipe! i recreated it on my blog with some tweaks and we will make this again and again. yay, melissa!

Smoked Sausage with Potatoes, Sauerkraut & Ale

For some reason, my potatoes did not want to cook and this ended up going a lot longer than recommended. That said, it was a warming comfort-meal on a cold night, and as a sauerkraut lover, I'll make it again. We used a gluten-free hard apple cider and the combination was delicious!

Gluten-Free Applesauce Bread Pudding

As-is, the recipe was a bit lacking. Our bread pudding experience involves rich, dense, buttery goodness, so I made some significant tweaks. We started by making this gluten-free with gluten-free cinnamon raisin bread and gluten-free oats. I added cinnamon and replaced the brown sugar with maple sugar in the custard mixture. For the topping, I added almond flour and butter as well as nutmeg. To take this over the top, we baked it in an iron skillet that had been prepared with melted butter.

ok, giant "oops!" the PUMPKIN sausage chili should have pumpkin in it - 2 cups of pumpkin puree, to be exact. note to self: don't edit recipes in the wee hours. :)

Morning Delight Quiche

We use the Johnsonville Sweet Italian Sausage with all-natural ingredients. Subbed the frozen hash browns for peeled, grated sweet potatoes and made this dish in a cast iron skillet - YUM! The skillet preparation adds a caramelized crust that is amazing. Will definitely make again.

Rotini with Asparagus, Salmon and Cherry Tomatoes

We really enjoyed this one! The lemon is of course perfect with the salmon. Do be careful with cooking times on the gluten-free pasta (we used the Barilla gluten-free rotini); too long or too short a cooking time leaves an unpleasant texture. I discovered I'm not a fresh tarragon fan and next time I'll try this recipe with dill!

This is delicious and refreshing. If you're new to green monster smoothies, it's an experience, but if you're familiar with them you'll love it! Reminds you of a healthy version of a Girl Scout cookie.

Grilled Masala Chicken with Vegetables

We really enjoyed this dish. The chicken was moist and flavorful, and we created a moroccan-inspired tomato salad to add brightness to the meal. Enjoyed the ease of incorporating the garam masala to create new flavor profiles. And you can't beat the fast clean-up.

Grilled Salmon Greek Pitas

We LOVED these! We're a salmon family, and although our grill had died, we were able to create that slightly-smoky flavor but cooking them under the broiler. Juicy and little-to-no-mess, and each person could help themselves to the portion they wanted. We may just take Lillian's suggestion and try it again with shrimp!

Amazing Muffin Cups

ABSOLUTELY use foil muffin liners. at least, if you did, as i did, use shredded sweet potatoes instead of the hashbrowns. but they are divine. i enjoyed every bite, and then spent an hour cleaning my muffin pans! (worth it!) :)

Grilled Zucchini Pizza

Our grill crashed right before we could make these, so we did them in the oven! 450, 10 minutes each side, then top with toppings. We also remade this recipe with Johnsonville Italian sausage added - YUM. Thanks for sharing!!

Pork Carnitas with Cilantro Tomatillo Sauce

We really enjoyed this recipe. We did a full roast in the crockpot and shredded it; I had mine as a "bowl," with crumbled queso fresco and fresh chopped cilantro on top, along with Chipotle hot sauce. I loved the tomatillo salsa so much I used tomatillos in other recipes this week! We will make this again and again.

Sweet and Spicy Salmon with Grapefruit Salsa

This was delicious! I love the tang of the grapefruit with the warming spices and in our home, salmon is welcome to the table any day of the week. We did add sea salt and fresh squeezed orange juice (a teaspoon or so) to the salsa.

Homemade Herb Salt

sweet and simple and great for gift-giving! we added all kinds of extra "goodies" the second time we made this - sesame seeds,finely ground nuts, garlic granules... but the original recipe is lovely and a great all-round seasoning - especially with the fresh herbs!
