Rotini with Asparagus, Salmon and Cherry Tomatoes

Reviewed: Aug. 1, 2014
We really enjoyed this one! The lemon is of course perfect with the salmon. Do be careful with cooking times on the gluten-free pasta (we used the Barilla gluten-free rotini); too long or too short a cooking time leaves an unpleasant texture. I discovered I'm not a fresh tarragon fan and next time I'll try this recipe with dill!

Gluten Free Rotini with a Charred Green Onion Pesto, Toasted Cashews and Cranberries

Reviewed: Jul. 12, 2014
I loved JRbaker's suggestion of adding the grilled chicken, and I'll do that next time we make the recipe. I'm also going to try the pesto on other dishes.

Thin Mint Green Monster

Reviewed: Jun. 17, 2014
This is delicious and refreshing. If you're new to green monster smoothies, it's an experience, but if you're familiar with them you'll love it! Reminds you of a healthy version of a Girl Scout cookie.

Grilled Masala Chicken with Vegetables

Reviewed: Jun. 16, 2014
We really enjoyed this dish. The chicken was moist and flavorful, and we created a moroccan-inspired tomato salad to add brightness to the meal. Enjoyed the ease of incorporating the garam masala to create new flavor profiles. And you can't beat the fast clean-up.

Grilled Salmon Greek Pitas

Reviewed: Jun. 12, 2014
We LOVED these! We're a salmon family, and although our grill had died, we were able to create that slightly-smoky flavor but cooking them under the broiler. Juicy and little-to-no-mess, and each person could help themselves to the portion they wanted. We may just take Lillian's suggestion and try it again with shrimp!

Amazing Muffin Cups

Reviewed: Apr. 21, 2014
ABSOLUTELY use foil muffin liners. at least, if you did, as i did, use shredded sweet potatoes instead of the hashbrowns. but they are divine. i enjoyed every bite, and then spent an hour cleaning my muffin pans! (worth it!) :)

Grilled Zucchini Pizza

Reviewed: Apr. 14, 2014
Our grill crashed right before we could make these, so we did them in the oven! 450, 10 minutes each side, then top with toppings. We also remade this recipe with Johnsonville Italian sausage added - YUM. Thanks for sharing!!

Pork Carnitas with Cilantro Tomatillo Sauce

Reviewed: Mar. 20, 2014
We really enjoyed this recipe. We did a full roast in the crockpot and shredded it; I had mine as a "bowl," with crumbled queso fresco and fresh chopped cilantro on top, along with Chipotle hot sauce. I loved the tomatillo salsa so much I used tomatillos in other recipes this week! We will make this again and again.

Sweet and Spicy Salmon with Grapefruit Salsa

Reviewed: Mar. 10, 2014
This was delicious! I love the tang of the grapefruit with the warming spices and in our home, salmon is welcome to the table any day of the week. We did add sea salt and fresh squeezed orange juice (a teaspoon or so) to the salsa.

I could eat this all day long - nothing else needed! But it's great in coffee, over ice cream, you name it. :)

Homemade Herb Salt

Reviewed: Dec. 19, 2013
sweet and simple and great for gift-giving! we added all kinds of extra "goodies" the second time we made this - sesame seeds, finely ground nuts, garlic granules... but the original recipe is lovely and a great all-round seasoning - especially with the fresh herbs!

Sausage, Peppers and Spaghetti Squash

Reviewed: Oct. 21, 2013
Edited: Be sure to get fresh fennel; it's worth it and really makes the dish. Also, we prefer to use the Johnsonville Ground Sausage because it has no unsavory additives.

Maple Basted Roast Turkey with Cranberry Pan Gravy

Reviewed: Sep. 23, 2013
this is delicious. we enjoyed it the night we made it, then used the bones to make broth. we froze the leftover turkey and used it to make a casserole one night, a "turkey salad" for lunch another day, and turkey egg scramble still another! who says a gorgeous roasted turkey and leftover creatives should be for Thanksgiving only!!??

Stuffed Bison Burgers with Caramelized Figs and Shallots

Reviewed: Sep. 19, 2013
devoured it for dinner. at a leftover one for lunch the next day. and for breakfast the following day. rich and smoky from the cheese contrasted by sweetness and crunch form the shallots and figs. i feel this is the beginning of my love affair with bison.

i do NOT like pineapple with my meat, but i determined to give this a try, and i've gotta say, i'm smitten. so much so, that we're making it twice this week! we did ours with a lettuce "bun," and it was run-down-your-elbows messy, but oh-so-worth-it.

Smoked Sausage Frittata

Reviewed: Sep. 9, 2013
For some reason our crew doesn't care for the pan-baked fritatta, so my son made this in an 11x14 glass casserole dish (doubled). It was fast, easy, and will be made again!

Savory Beef Tenderloin

Reviewed: Aug. 30, 2013
loved the flavor on the steak and to be honest, we could've eaten the topping straight-up, with a spoon! served with green beans, but thinking next time a tomato-avocado salad with a lemony dressing to add a tangy compliment.
