this was DELISH! it's crunchy and bright, juicy and sweet. i classify it is a delightful option for paleo proponents, and if you're leaning that way, you'll be interested to know that although jicama is technically a "tuber," most paleo writers say the
root itself is "safe" to eat. (i should add, tho' i am NOT strictly paleo, and less so the more i read, i am definitely incorporating a lot of the "clean" principles into our everyday diet. and LOVING it...)
i served it alongside beer marinated pork tenderloin (yes, from here, and post coming soon!), but was perfectly happy to eat a bowl of it for lunch the next day.

(disclaimer: we couldn't find Thai chiles, so at the advice of our produce guy, we used 2 jalapenos. we also added fresh orange and lime zest and juiced the lime instead of a lemon, just because it's what we had. if you ask me, the zest perfected the dish.
hubby advised me to "pick up a fire hydrant on the way home" as it was a wee bit spicy for him. for the rest of us, it was perfect.)
