Wow - so tasty! Also followed the Screaming Chef's recommendation to a degree, except I did not have curry paste! So I added curry powder to the oil, heating it prior to adding the chicken. Ended up adding curry several times throughout the cooking process, but I have discovered that I really like the flavor of curry! Used only about 1/2 to 2/3 can of light coconut milk, still needed to add cornstarch to thicken at the end. Added more veggies as well - sliced carrots, peas, and diced red and green onions. Added same veggies and garlic to the jasmine rice in addition to the red pepper. Deleted the sugar; wished I had used pineapple tidbits vs chunks - next time for sure! My wife and I really enjoyed this!
