Fire-Roasted Tomato and Spinach Pasta

this is a regular for me. i made my own creamed spinach-i sautee thawed chopped spinach, onions, garlic, cream cheese, parmesean cheese, black pepper, lemon juice, white wine and chicken broth. i'm not sure of the amounts, i just make it according to taste but i know use alot more garlic then called for. and i also add crushed red pepper. excellent!!

Eggplant Red Gravy with Anchovies

This was excellent. I left out the green pepper, bay leaf and tomato paste which I do not think is necessary because my gravy turned out on the thick side without it. I also left out the mushrooms because I do not like them. I added extra garlic and used 2 cans of anchovies. The whole time this was cooking I thought it smelled familiar, IT SMELLED AND TASTED JUST LIKE LIGUINI WITH RED CLAM SAUCE BUT MUCH CHEAPER TO MAKE. Do not be afaid to try this if you like trying different tomato sauces.

Spanish Rice Bake

This is a great one dish meal with a salad. I will be making it again for the 2nd time tomorrow. It's quick, easy and very tasty. The only changes I made were to use brown rice and omit the salt as I do with all recipes.

Chicken, Garlic, and Sundried Tomato Pasta

This was the very first recipe I made from this site and have now made it twice. I omitted the butter and used a little canola oil instead. I also used low fat milk and no salt. I added extra garlic as I do with all recipes since it's never enough. And added red pepper flakes for some hot spice This was great: Quick, easy and tastey.

I was very hesitant about this because of the anchovies, which i will not eat. But I was looking for a no meat recipe for lent and this sounded interesting. Well, I was pleasantly was delicious. I did use anchovy paste based on other reviews and used extra garlic, capers and some fresh basil. I also agree the oil is too much. I doubled the recipe and used 3/4 c of oil, which I think the 1/2 c in the recipe is enough for 16 oz of pasta. This is definately a keeper!
