Taqueria Style Tacos - Carne Asada

I absolutely loved this recipe! Tons of flavor, even if you don't marinate the meat for a long time. I added more garlic (since I grow my own) and less soy sauce (too salty). No white pepper, just coarse grind black pepper. With fresh guacamole and tomatoes from the garden, it's taco heaven! Even my guy (who is not a big fan of Mexican food) thought this was awesome!

Chocolate Cappuccino Cheesecake

Having made many many cheesecakes in the past, I have ALWAYS made mine in the food processor with the steel blade. This guarantees a perfectly smooth consistent texture. Always use expresso powder recipes call for 'strong coffee'- really intensifies the chocolate flavor. I've also used cappuccino liquor for an added flavor. I always wrap the bottom of the springform pan with 3 layers of heavy duty foil and bake in a water bath. This is the method that Juniors'(Brooklyn) uses for its' famous cheesecakes to keep them extra creamy!

Best Big, Fat, Chewy Chocolate Chip Cookie

I may have over-chilled the dough, but these were very thick and not very chewy, which was what I was looking for. The taste was wonderful and my co-workers gobbled them up, but still too hard for my sweetheart to enjoy.

Apple Pie by Grandma Ople

I thought this pie was terribly bland as written. I added a touch of lemon juice, about 1/2 tsp. fresh grated nutmeg, 2 tsp. cinnamon and it still tasted a tad underwhelming. I used Ina Garten's pie crust recipe, and that got more rave reviews from the family than the filling. I like the idea of cooking the sugar/butter together but will not be making this recipe again.

Whit's Chicken Enchiladas

I did a number of changes to this recipe- used rotisserie chicken, shredded- 5 cloves of garlic, used queso campesino as well as Mexican blend cheese, used chicken broth to moisten the mix, added cumin, chili powder, cayenne and black pepper. Used a can of enchilada sauce that I reduced first since it was so watery. Used corn tortillas. It was awesome!!

Dad's Leftover Turkey Pot Pie

Excellent flavor! The sauce was entirely too thick- browned the roux a little longer, then added more broth and milk, then added a little white wine. Did not use Italian seasoning- instead added more onion, sage, fresh thyme. Baked the bottom crust for 10 minutes before adding the filling. Was even better reheated the next day! Yummy!
