Jalapeno Popper Spread

So simple and very delicious. I doubled the peppers and I followed one reviewer's advice and topped it with a mixture of parmesan and panko crumbs to give it a golden, crunchy topping. However, I didn't think it looked unappetizing without it, as one person suggested. Either way, this is a new staple dip.

Carne Guisada II

This is now my favorite way to cook stewing beef. I doubled the recipe, and followed the recipe, except that I used one can of tomato paste and one can of crushed tomatoes. I also dredged the beef in flour and browned it before putting it in the slow cooker. It's also a good idea to use whole spices ground with a mortar and pestle when using the slow cooker, because the flavor of powdered seasonings gets lost after several hours of cooking. Thanks so much for this recipe.

Enchilada Casserole III

I added 2 Tbsp of 'Taco Seasoning I' mix to the meat mixture and also a 14 oz. can of diced tomatoes. It made a lot, and the leftovers disappeared quickly. I think next time I will add a can of black beans instead of the refried, as per one reviewer, just to give it a nicer presentation. Thanks for this recipe - we really enjoyed it.

Coconut Curry Tofu

This was very good. I used red Thai curry paste in place of the curry powder and took the sodium down a notch by adding a little less soy sauce and no extra salt. Next time, I will add fresh coriander. I like to cook tofu about twice a month and I think this will be it for a while. UPDATE: I tried this again, using chicken breast cut into chunks (dredged in flour and browned in olive oil) and this time added the coriander. Even better the next day!

Chuck's Favorite Mac and Cheese

This was easy and everyone loved it, including the leftovers. I added 1/2 cup light cream, used 1/2 cup bread crumbs with 1/4 cup melted butter, mixing them with finely crumbled crisp bacon for the top. I don't think this recipe can go wrong. We loved all the combined flavors with the sour cream and cottage cheese. This is a keeper.

Crispy Oven Chicken

This gets four stars for being that easy. I used low sodium crackers, so next time I will add salt according to the cracker I use. And a little more spice, perhaps some garlic and onion, fresh or powdered. The coating was very crunchy, the ckicken breast very tender and moist. I'd make this again. Easy, quick, tasty.

Melt - In - Your - Mouth Shortbread

I doubled the recipe, and whipped it to death in the mixer as a few people had recomended. I found that baking at 375F was good for a maximum of 9 minutes in my oven. The edges were lightly browned, but not overbaked. (One reviewer had said 350F for 9 minutes was perfect, but that didn't work in my oven at all). I did half the batter according to the recipe, but for the second half I added a bit of vanilla, and I liked the next batches a bit better. All in all, they are so melt-in-your-mouth, that there's no other way to describe them. I waited for the cookies to cool COMPLETELY before removing them from the sheet, but I still experienced a lot of crumbling cookies nonetheless. However, my kids were not unhappy being able to feast on the broken cookies and crumbs. These really are exceptional. Next time I will make them teeny little one-bite cookies with a marachino cherry for decoration, just as my gradmother did. Thanks for a great old recipe!!

Chicken and Dumplings III

I cooked a chopped onion and 3 garlic cloves in olive oil, then added 8 bone-in chicken thighs with chicken broth to cover and boiled for one hour. I also added carrots, celery and a bay leaf. I let the chicken cool in the broth before cleaning and shredding, pureed the carrot and celery, and added it all back to the broth after I skimmed off the fat. I added a can of cream of celery and a can of cream of mushroom, then brought to a boil. I also 1/2 cup of frozen peas. I used canned biscuit dough for the dumplings, cutting them into pieces, then flattening them before adding them to the broth. They took 25 minutes: 15 minutes without the lid, additional 10 minutes with the lid on. This was the best, and so easy! Next time I'll boil a whole chicken to shred, just because it was 'just enough' for my family, and I'd like some leftovers.

Baked Pork Chops I

Excellent recipe. I like to use butter cracker crumbs in place of bread, and I added sour cream in place of the milk. Not that I think it made it that much better, but it's what I had on hand. I fried the chops til they were very crispy on the outisde and baked them 20 minutes first, then 20 minutes with the sauce. They were quite thick and I thought it enough time to make them very tasty and tender. Thank you!

These are fabulous! While I'm sure they're great with flour tortillas, I have to say that using corn tortillas warmed in olive oil added the flavor and texture that made them the best ever. This deserves more than five stars!

Caramelized Baked Chicken

Loved this. I followed one reviewer's advice and used 3/4 c. honey - 3/4 c. ketchup - 1/2 c. soy, boiling the sauce to reduce first. I made wings, and I baked at 350F for 1 hour, turning them once and spooning the sauce over. I saved a few for the next day, and they were even better!

Famous Pork Chops

I used boneless center cut chops, about 3/4" thick. Overcooked the first time. Second time, I cooked them at 350F for one hour - perfect. Used cracker crumbs and half the butter. Also flash fried them first.

Broiled Tilapia Parmesan

I made this according to the recipe with the addition of garlic and paprika to the topping. I grilled the tilapia fillets vein side up for the first two minutes, flipped them and grilled for another two, then finished them with the topping for three. Perfect!!

Special Deviled Eggs

These are delicious. Since it was my first time to make this recipe, I made it exactly as stated. They were a little more runny than I'm used to, so in the future, I'll use less of the wet ingredients. But they are wonderful all the same, and deserving of a five-star rating
