Chicken, Stuffing and Green Bean Casserole

Fantastic basic recipe that's infinitely customizable. We substituted canned corn for canned green beans, added fresh carrots and green beans, a touch of white wine.

Fruit Rice Salad

Warning: makes A LOT as presented. It says serves 6, but it serves closer to twelve. Unless you're taking it to a pot luck, I recommend halving or even quartering the amounts. Otherwise, VERY tasty and fun textures too.

Vegetable Feta Rice

Made as directed and was very heavy on the onion. I would either half the red onion content or substitute for green onions that have a bit more mild flavor. Substituting balsamic viniger for the red wine would also be interesting, though the glaze is good as is.

Roasted Salmon with Orange-Ginger Glaze

Adding a teaspoon or two of honey helps this glaze to "stick" better to the salmon and lock in the moisture. Otherwise this is a great base with a very original taste.

Asian Chicken Noodle Soup

I really love this soup. Pefect for lunch and much heartier than it looks. I added snap peas to it and doubled the noodles, but it's great in it's original form too!

Toads in the Hole I

Pretty tasty, but needs a little something extra as the base is pretty bland. Adding something like mushrooms and green onions should greatly improve it. A great base for experimentation. Do note that it needs to be served right out of the oven for best results.
