Fudge

I agree with the review "it's just not fudge-like." It is so easy to make, but not that creamy, melting-sugar-in-your-mouth feeling of fudge. It tastes more like eating chocolate. I won't be making it again.

World's Best Oreo® Fudge

Too sweet?! Say what? IT IS FUDGE. :) I reduced the sugar to 2 1/2 cups, and used a healthy 1 cup crushed chocolate cream Oreos IN it and probably 3/4 cup chocolate cream Oreos on top. I find the perfect fudge temperature is 238 degrees F (it boiled about 4 minutes for me). If you don't have a thermometer, it is so worth it. I used to deal with the "soft ball" stage thing, now I just stir and stir until it hits 238 and voila! This is my new favorite fudge!

Spinach Salad with Curry Vinaigrette

I loved the smell of the curry roasting. I was worried the curry was going go overwhelm the salad, but it was just right! Used olive oil instead of vegetable oil, and just cooked turkey bacon in the microwave and just crumbled that in. Added chick peas (so good!) and tomatoes. Served to grandparents and children, everyone liked it!

Honey Baked Chicken

Used a little less butter and included some chicken legs. I broiled the chicken for the last 2 minutes to crisp the skin a little. VERY good! Served with lemon basmati rice (recipe on this site).

Strawberry Cheesecake French Toast

I hollowed out bakery hamburger buns and stuffed them with the filling and topped them with the strawberries. I did add cinnamon to the eggs. My family LOVED this!

Super-Easy Rocky Road Fudge

5 stars for ease, 3 stars for WAY too many marshmallows! I used 2 cups and felt that was even borderline. I used 1/2 milk 1/2 dark and honey roasted peanuts as someone else suggested. I'd call it a winner when you are in a pinch!

Poppyseed Dressing

Loved this! I used about 1/4 cup chopped green onions and put them in the food processor (it did turn my dressing kind of green, but it didn't matter when I mixed it in). Instead of a cup of oil, I used 1/2 cup extra light olive oil. I used this dressing on spinach, peaches, blue cheese, and toasted pecans. Delicious!

Slow Cooker Chicken Stroganoff

SO quick and easy! I used frozen chicken breasts and cut them a few hours in. I used real butter, but reduced fat cream cheese and healthy request soup. Served over "No Yolks" egg noodles. I will definitely make this again!

Caramelized Spicy Pumpkin Seeds

These were delicious! Definitely NOT bland. I substituted the cayenne for 1/4 chili powder and used butter instead of oil. Other than that followed the recipe exactly. We LOVED them!

Mushroom Cheeseburger Calzones

Delicious! I left out the mushrooms and peppers to make it more kid-friendly. I sauteed the onion first, and added minced garlic, and garlic salt. Everyone liked it, I would definitely make it again!

Sun-Dried Tomato Goat Cheese Spread

I bought "herb" goat cheese, let it get soft, and spread it on the bottom of my dish. I then put chopped sun-dried tomatoes (the kind in oil) on top, and finally topped with sliced greek olives. Awesome with wine!

Broccoli Salad with Margarita Dressing

Yum! I used my food processor and processed the onion with the EVOO, lime juice, etc... I admit that when I tasted it, I thought it tasted a little sweet, but it is AWESOME with the broccoli. I marinated broccoli, tomatoes, and chick peas (love these)... I left out the mushrooms. Then I poured the marinated veggies on the romaine (and tossed) so that it wouldn't get soggy. Everyone loved it!

Used 3:1 shortening/butter (3 tbsp. shortening, 1 tbsp. butter). Used milk instead of water. Mixed shortening with butter first, then gradually added sugar and milk. Perfection! Delicious and piped easily! I think if you were spreading it, you would need more liquid, but for piping it was perfect!! (Probably added more vanilla... more like 2 tsps!!)
