Yummy Veal Meat Loaf

Loved this one! Followed the recipe as written - well, except for my mistake! I put the entire 1 cup ketchup in the meat mixture. No harm done. It was still delish, just extra moist. And since I dumped in all the ketchup, I decided to top it with our favorite bar-b-que sauce. Fantastic! Next time, I may cook the onions a bit first, but I can't say the crunch did any harm. And, like other reviewers, I must report that my house smelled amazing! Thanks, Marylou!

Shepherd's Pie

Really great taste! I made it with chopped ham instead of ground beef, and it was delicious. I also added cheese, milk, and butter to the mashed potatoes. It's already a family favorite!

Sesame Pasta Chicken Salad

Great dish! I added mandarin oranges. I also cut back to 1/4 cup vegetable oil and did not add the cilantro. I didn't have any rice vinegar, so I substituted apple cider vinegar. It was delicious!

Grilled Salmon with Habanero-Lime Butter

WONDERFUL!!! My husband, in-laws, and myself loved this dish, and neither my father-in-law nor myself are big fish eaters! I did take the seeds out of the habanero peppers, but I may leave a few in next time. It was not hot for us at all. The flavors blend together great, and there is no "fishy" flavor. I just had to try the butter before dinner, and it's great on melba toast! Will do again soon!

Reduced Fat Potato Soup

This was great! Very filling! I didn't have any of the frozen hash browns, so I just used fresh potatoes, bell pepper, and onion, measuring out the 16 ounces total. It added a little time for chopping, but it worked out great. I did add a little parsley and some pepper and used fat free cheddar and chives since that's what I had. I will make it again soon!

Brown Family's Favorite Pumpkin Pie

Wow! I usually don't like pumpkin pie, but this was tasty! I decided to try this with the scraps from the kid's Halloween pumpkin carving. Everything I read online said I would be disappointed using a jack-o-lantern pumkin, but not with this recipe! Thus, I used fresh pumpkin, which I steamed and pureed. The only other change I made was using slivered almonds instead of walnumts, only because that's what I had. Thanks Brown Family for giving a new holiday favorite to our family!

Best Ever Pie Crust

I've never been very good at making pie crusts, so I switched to store bought some time back. However, I didn't feel like going to the store, so I tried this recipe. Boy, am I glad I did! After making a pumpkin pie with it, my husband complemented the crust! That's never happened before! I did cut back a little on the water. At first, it seemed too sticky, but after it chilled it was great! No more store bought for me. I think this one will even give my husband's grandmother, the family's only "successful" pie crust maker, a run for her money!

The Perfect Marinade

This has quickly become one of my favorite marinades! I use it most often on shrimp. They are great grilled after a couple of hours marinating in this recipe. I am thinking about adding a little sesame oil to the mix to bring out the sesame flavor. The seeds don't add much flavor. Thanks for a great recipe!

Chicken and Mandarin Oranges

Wow! What a wonderful, unique taste. Even my kids liked this one. I did use green onions instead of regular onions. I also ended up using more seasoning. Instead of sprinkling it on, I used it more like a rub. Will make again soon! Thanks!

Zucchini Cilantro Dip

I was browsing allrecipes.com looking for something to do with a bunch of zucchini I had been given when I saw this recipe. I'm so glad I did! This was very good, albeit a bit messy to make. I did add more salt and upped the garlic since we like things with more garlic. I did use a jalapeno. I actually made 2 batchees - one for us and one for the in-laws. Thanks for a great new recipe!

Pineapple Cherry Ice Cream

Squash Medley

Very, very good! I was concerned that this might be too sweet, but it wasn't. Hubby said, "Don't change a thing!" I did use real bacon bits instead of cooking the bacon, but I still cooked the onion in a little bacon grease. I may try adding chicken or shrimp and mixing in some pasta. I also may kick up the heat a bit, but only because we like it hot. Thanks for a great recipe!

Quinoa Pilaf with Shredded Chicken

Everyone really liked this, including my 11 year old son. It reminded me of chicken and rice soup in its flavor. Didn't have any cocout oil, so I subbed olive oil. I did add a little minced garlic to the veggies after they had cooked a bit, and I added the chicken to the pot with the quinoa. May try adding a little stir-fried veggies after everything cooks. I missed a little crunch and the brighter colors, as the veggies had all cooked down. Thanks for a great recipe with many possibilities!

Artichoke Hearts Gratin

We loved this! I didn't put as much breadcrumbs or cheese as suggested just to try and cut a bit of calories, and it was still fantastic. I did use an Italian blend of cheeses. A real keeper!
