Sour Cream Cornbread

This gets 5 stars because it's the only cornbread that my 14 year old has been willing to eat! I really like it too, but don't always have the sour cream on hand, so will only make when I do.

I'll give it 5 stars as is, even though I use real butter instead of the shortening. The shortening makes them softer, but we use real butter as a preference.

Creamy Italian Dressing II

I'm giving this 5 stars after using it for several years as an excellent base for other creamy dressings. As written, it is a mild tasting creamy garlic dressing or dip. You really must let it sit for at least four hours for the flavors to develop fully! To make a creamy Italian as the original poster intended, I like to add more vinegar and an Italian blend for the herbs. However, you can add other ingredients as well, to taste. Parmesan cheese; a little tomato paste or ketchup; fresh ground peppercorns; different vinegars (try tarragon infused white wine vinegar and change the herbs to tarragon); buttermilk; use your imagination!

Bacon Quiche

I think this is basically "Impossible Quiche" from Bisquick, but I loved it and so did my family--in fact, next time, I'll need to make two of these to feed our family of 5! Good recipe to tweak, too.

Green Chile Stew with Pork

Like someone before me, I noticed this was lifted right from "The Frugal Gourmet", except this person didn't even mention to roast the chilis, which in my opinion helps to make the recipe! Very good, however (with the ROASTED chilis). I don't think there are any copyright laws on recipes, but the description could have at least been original!

Mini Pumpkin Whoopie Pies

EXCELLENT recipe for whoopie pies, except I did add 1/3 cup extra flour and next time, I'll double the filling recipe. The whoopie pies I grew up on in PA Dutch country have lots of filling, and I had to spread this kind of thin, and ran out of filling just before I ran out of cookies. Pumpkin cookie recipe would be great on its own, too.

Fruitcake for the Picky

This is only the third year I've made fruitcake, and this is the first time I've used this recipe. It's different than the one I've used the past 2 years; it's seems a little less heavy, for starters. I substituted apricots for the mango, golden raisins for the currents (couldn't find either of the those ingredients). I omitted the citron since I couldn't find it in the store, but I added the zest of one orange. I used spiced rum--it tastes better to me. Of course, I won't know for a couple months how this tastes, but it looked good coming out of the oven, smelled great, and the little bit I snuck off the top tasted pretty good! Give it awhile to blend flavors, YUM! Can't wait! Glad I doubled the recipe!

Christmas Fruitcake

Marshmallow Fondant

Yes, this was a sticky mess to start with, but once I got kneading, it was easy! And super fun! The fondant had a beautiful, soft texture, not stiff like the stuff you can buy. I only rolled mine out (the next day) to cover the cake, but I'd like to make it again and shape some fun details out of it. It did taste pretty good too.

Homemade Peanut Butter Cups

These were pretty good. I liked the filling, but I'd try better chocolate the next time I make them. I put the mini liners right into my mini pan to stablize them, then followed the recipe exactly. Everyone liked them, though, and I didn't think they were very complicated to make, so I will try them again!

Prego® Porcupine Meatballs

only okay--may have been better had I followed to a "T", but I chose to bake the meatballs first, since that's what I usually do when I make meatballs. They were a bit dry, although the sauce did help with that. Probably won't make again.

Refried Beans Without the Refry

Really good--even though I didn't follow exactly. I added a ham hock for the flavor, omitted the salt and the peppers. I'm sure as written it's also excellent--but what I loved the most was finally fixing beans in a crockpot successfully, and finding out that I don't have to always soak the beans! ****I'm changing my review to reflect the fact that I've since made this twice, following the recipe, and it's even better just as written! I also made it another time, using a mix of half pinto and half black beans, and that was good too. However, as written is the best of all!

Apple Spice Cake

Excellent cake recipe! I followed the suggestion of substituting 1/2 cup brown sugar, and omitted the raisins (kids hate 'em--too bad, Im sure they would have been great) I also grated the apples, since I wanted a more uniform appearance and baked in a 9X13 pan. Frost with cinnamon cream cheese frosting--MMMMM!

Sour Cream Apple Pie Deluxe

great recipe, I've been making sour cream apple for years, and used this version the last time I made it. I add walnuts to the topping, really good addition! The last time I made it, I gave out slices to the doctor and nurse I work for, and they both raved and raved! I'm making it again, at the doc's request, and writing down the recipe so he can make it at home.

Watermelon Pops

Cute idea, but not as easy as they sound. The chocolate chips simply dropped to the bottom (I don't have time and/or desire to babysit the pops to add the chips at "just the right time!") I think I used too large of paper cups, since I didn't get the thicker looking layers as in the photo, or as many pops as the recipe states. However, the kids did like them and they were all eaten up!

This was good, my kids even liked it(after complaining that they don't like fish!) My 10 year old even said "I guess I like THIS kind of fish." Be careful not to overcook.
