Harvest Rice Dish

I made this for a client and received rave reviews! It was very festive in appearance and smelled heavenly! I used a brown/wild rice blend from Trader Joe's and used my pressure cooker to cut down the cooking time. (15 minutes) Also used vegetable broth for my vegetarian clients.

Holiday Cranberry Sauce

I'm not a real cranberry sauce fan, but this is good. My youngest daughter made it for Thanksgiving, very simple. Haven't bought a can since!

Baked Mashed Potatoes

These are great! Have made them twice, last night for a Christmas Party that I catered. So much easier than mashing them right before dinner! I made them the day before, put them in gallon bags & they tasted like I had just made them on the spot! I did add a whole head of garlic that I pre roasted....yum!

Baked Stuffed Shrimp

I don't think I'd serve this as a main course, but it is a wonderful appetizer! I made it for a Christmas party that I catered & guests raved over it! I used very large shrimp (13-15ct), quadrupled the recipe. Next time I would only double it for the number served (20) as it is very rich. Brought the leftovers home, it's delicious cold too!

Mushroom Spinach Soup

This is a wonderful soup. I made it according to the directions, used 1/4 crimini, 1/4 shitake & 1/2 regular mushrooms. I did strain it because I wanted a light soup for a first course at a Christmas party I catered....the spinach leaves & mushrooms were a nice touch, but the parmesan sort of sank to the bottom. The strained veggies seemed to yummy to throw away, next time I maight save them & serve over pasta.

Coleslaw

Very good and Very easy. I used packaged coleslaw, added red onion. Also good with seasoned rice vinegar. Will definately make it again!

Fruit Pizza I

Very easy very delicious! I also used ready made sugar cookie dough. I baked it on my Pampered Chef stone, you can roll the dough if you put wax paper on top. For one party I used strawberries, raspberries & blueberries and put more Cool Whip on top. Then used the fruit & decorated it as the US Flag! Also substituted Tofu cream cheese & non-dairy topping for a lactose intolerant group! Great recipe!

Amy's Cilantro Cream Sauce

This sauce is great! I catered an office party and had so many requests for this recipe. Served with fresh vegetables & pita crisps as a dip. It will also be fantastic as a sauce for fresh fish & chicken.

Basic Margarita

This basic recipe is great! I have a commercial blender so I increased the tequila to 1 cup & the triple sec to about 1/3cup. I also reduced the limeade a bit so that 2 12oz cans made 3 batches. I used fresh cut limes to wet the rim of the glasses before salting, and served them with the lime wedge on the edge of the glass. These were a great hit at 2 office functions...everyone asked for my recipe!
