Triple the Ginger Cookies

Reviewed: Feb. 15, 2007
Easy and deliciously spicy. I cut the brown sugar by half, and rolled small balls of dough in granulated sugar before baking for a little sparkle. (Remember that the candied ginger is very sweet too.)

Southern Living magazine's Blackberry Cobbler

Reviewed: Jun. 16, 2006
Very skimpy on the crust. The flavor of the spices and orange was pleasant, but made the filling too juicy.

Bread Pudding I

Reviewed: Jun. 16, 2006
This was perfectly nice, but nothing spectacular. Also, I found it too eggy rather than custard-y. If I were to make it again I'd leave out one egg. I used golden raisins plumped in hot water, whole wheat bread, and cut down the sugar a bit.

Whole Wheat Beer Bread

Reviewed: Jun. 11, 2006
Very good for what it is: a quick, *easy* bread that tastes/smells like yeast. Didn't look very pretty, but just slice it before you serve and no one will know. I cut down the sugar to 1/4 c. The bread was very yummy, sliced and topped with honey.

Anaheim Fish Tacos

Reviewed: Jun. 6, 2006
Too soupy for tacos. The name should be changed to "Spicy Mexican Fish Soup" - I'd give 4 stars for that. I ended up serving the fish in bowls with corn tortilla quesadillas on the side. Pretty tasty anyway.

Hearty Turkey Soup with Parsley Dumplings

Reviewed: Jul. 8, 2004
This was soooo delicious. Definitely worth the work. Too bad I only roast a turkey once a year, it's almost worth it to cook one just so you can make the soup! Don't skip the dumplings, they are a close second to the delectably complex broth for the best part of the soup. Just make sure to keep the dumplings small, otherwise they are a little doughy in the middle. I skimmed the fat from the broth. Loved it!

Tart Lemon Triangles

Reviewed: Jun. 24, 2004
The crust was very floury and too crumbly. The filling tasted good, I used fresh limes and reduced the sugar to 3/4 c. I will not use this recipe again because I know there are better ones out there.

Indonesian Satay

Reviewed: Jun. 21, 2004
Faaaantastic chicken! I sliced the chicken breasts into strips, marinated overnight, and threaded them onto skewers for my George Foreman grill. I served this at a birthday party and there were no leftovers. I didn't make the peanut sauce, and no one seemed to miss it.

Mexican Bean Salad

Reviewed: Mar. 25, 2003
Great! Very refreshing for hot summer days. I usually add extra cilantro and cut the dressing by half, or make the whole batch and use half to marinate some chicken. One time I tried using the food processor to chop the veggies, but I don't recommend it! This is good with some fresh cubed avocado on top.

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Jan. 17, 2003
Definitely a different texture from your classic pancake, but that's part of what makes it good. I use applesauce instead of the oil and regular milk instead of soy. Add a few extra blueberries, they're good for you. Delicious, and leftovers are good too.

Orange Glazed Carrots

Reviewed: Nov. 28, 2002
Very easy and kind of tasty, but pretty boring despite touch of ground ginger I added. If you are looking for a nice carrot recipe, try these. If you are looking for an exceptional carrot recipe, look elsewhere.

Southern Living magazine's Brunswick Stew

Reviewed: Sep. 4, 2002
The best vegetable soup I've ever eaten. A little time consuming, but SO easy. I used vegetable broth instead of water. It is a stew rather than a soup, so if you want more liquid add an extra cup or two of broth. I also added about 1-1/2 c. frozen okra with the corn and lima beans. Serve with cornbread. Yum!
