Cake Mix Cookies VIII

OK YUM. Have made this a couple times now. Our favorite is to make it with white cake mix and use white chocolate chips, 1 tsp of vanilla and 2 Tblsp of oil. Perfect every time. As soon as they come out of oven we dust them with fine grain sugar. SOO good!

Golden Rum Cake

Can I give it 6 stars? OMG. Hands down the best cake I've ever made. We just got back from Grand Cayman where they make the rum cakes, and unfortunately my husband is allergic to nuts so he couldn't eat any there. But my goal was to find a fabulous recipe once we got home so he could experience the goodness that is RUM CAKE. I used Meyers dark rum,substituted milk for water and omitted the walnuts. We devoured it in less than 12 hours. THE GLAZE is the bomb, and if you can stand it make a double batch of glaze and soak the cake in a big bowl of it, turning it over a couple times. It's truly an insanely wonderful recipe. It tastes like a giant donut with booze in it ! :) Thank you so much for sharing this, we LOVE LOVE LOVE it :)

Shepherd's Pie VI

YUM O. We had leftover mashed potatoes and leftover steamed carrots from a roast last night, and I stumbled upon this recipe. SO good. Browned the beef and onions together, added 1 cup of broth and added Baby Rays (3 Tblsp) in with the ketchup. Cut the carrots up into dice and added 1/2 cup of diced green beans. Kids and DH loved it on this rainy Seattle night. THANKS! :)

Beef Tenderloin With Roasted Shallots

Ok. Can you say D I V I N E???? We made this for Christmas and all I can say is that the effort was well worth it. We doubled this recipe for 2 4# roasts and it came out perfectly. Everyone raved. It was delish!

Exquisite Pizza Sauce

Outrageous. Really excellent taste. Don't leave out ANYTHING, don't forget to put in the anchovy paste. (Even tho it comes in a tube and it looks rude, it is such a key ingredient!)

Prime Rib

Dale this rocked but I agree with the last post Laurilan, we made it for Christmas and after following your instructions EXACTLY, it was still mooing ;) We had a lot of fun all hanging out at the "meat seat" near the un-opened oven and even concocted a "meat diary" of how blessed long we cooked it. It was quite amusing entertainment value on Christmas eve. Just allow a bunch of time when you attempt this because it sure needed it even for a medium doneness. OK...One hour at 500 in a CLEAN oven to prevent smoking, covered roast with foil. Turn oven off then LEAVE OVEN CLOSED for 90 minutes. Then turn oven up to 200 and cook for half hour, 300 for another half hour, 350 for another half hour. This was a 7.5 pound roast and this extravaganza took a total of 4 HOURS to get the internal temp up to 140. It was worth every minute. Thanks for the recipe, Dale.

Ham and Asparagus Fettuccine

Excellent use for leftover spiral cut ham from Christmas. We used 2 cans of cut up asparagus and added them with the ham to the sauce instead of cooking asparagus with the noodles. When I made this nobody was hungry at our house but after smelling the fab sauce they all changed their minds and ate a bunch along with foccacia. Thanks Steph :)

Kettle Corn

We make this over every campfire we have, which is basically every weekend. My kids LOVE this and it is a HUGE hit every time. Add a tiny bit of salt at the beginning and shake it over a camp fire in a chestnut roaster or long handled popcorn pan. YUM MEEEE!
