Chef John's Blueberry Muffins

These muffins turned out great, just a bit dry like many other reviews stated, but still warrant a 4-star rating. Full disclosure, I did substitute fat free plain greek yogurt instead of sour cream, so perhaps that affected it. The second time I made these, I added a half cup of applesauce, and the texture was then perfect.

Rebecca's Rockin' Vodka Lemonade

This was a little strong, so when we made it for our party we only used 3/4 the vodka called for (instead of 12 oz, 8 oz). It was incredible!

Tender Chicken Nuggets

These came out great! I used a regular egg instead of the egg white. Also, didn't have seasoned breadcrumbs, so as another reviewer suggested, I used unseasoned bread crumbs and added parsely, garlic powder, salt, and pepper.

Veggie Pizza

This was good, but not great. I followed the recipe exactly, except I only added half the amount of creamy spread called for. Even so, I still felt like it was slightly too much creaminess. Also, I felt like the spread lacked flavor. Perhaps, fresh dill would have made it more flavorful. I would like to try again with half the spread and fresh dill and maybe fresh ground pepper.

Great but, as others mentioned, slightly garlicy. May have been better with only 3 cloves of garlic. Next time may try using less oil to make it a bit healthier.

Excellent-- great flavor and texture! Because of cholesterol concerns, I substituted canola oil for the butter in the dough and did not brush tops with melted butter. Still soooo good!

Magic Cookie Bars from EAGLE BRAND®

I just think these cookies have way too many chocolate chips. If you reduce the chocolate chips to 1 and 1/4 cups it is much better and then worthy of five stars, but not as is.

Broccoli, Rice, Cheese, and Chicken Casserole

I made this just as directed and I did care for it. The worst part was the raw onions-- maybe if they were cooked prior to mixing in with the rest of the ingredients it would not overwhelm it so much. Also, I LOVE cheese, and even this was WAY too cheesy for me.

Red Broccoli Salad

I used 4 tablespoons of Bac-o s instead of the actual bacon because I am a vegetarian, but it's also healthier and makes the prep time shorter. But if going to use baco s instead of real bacon, only add it right before serving because otherwise they get mushy, and don't taste good. I also used light mayonnaise and added some raisins. It came out great.

Guacamole

This is an excellent guacamole recipe. The only thing is that I included the juice of one lime, but it was too much. Maybe I should have used a Mexican lime because those are smaller. Anyway, when I made it the second time I only used half a lime.

We used vegetarian sausage instead of the ground beef, minute rice instead of regular, and added corn to the stuffing mixture. They were phenomenal! My boyfriend who has a negative bias towards all foods vegetarian loved them.

This is delicious. Everyone who tried it said it was great. Except the recipe says it makes 12 servings and if eaten as a main dish it really only serves maybe 6 people.

Apple Dumplings I

These were pretty easy to make and were soooo good. I made some where I diced the apples and mixed them with cinnamon and sugar, and those were even better! Everyone said they were the best. Really great with vanilla icecream on top too.

Seven Layer Tortilla Pie

I won't make this again. It had a good flavor, but was really mushy in texture which made it kind of gross. My parents really didn't like it either, and we all found something else to eat afterwords because it was so unsatisfying.
