Chicken Piccata II

Excellent sauce--I pound out the chicken first, and add capers and artichoke hearts while it simmers. Fantastic with fettuccine alfredo on the side.

Mouth-Watering Stuffed Mushrooms

I have never made these without 1)People freaking out and fighting over the last one and 2)there being NONE left over within about the first 15 minutes of a dinner party, and then people move on to the other finger foods. I do add some chopped green onion and fresh minced garlic to the mushroom stems when I saute' them, and it makes a difference!

Cream Cheese Cookies I

Fantastic cookies from a cookie press--just be sure not to overbake them. When they're done they still look pale and soft, and they'll harden as they cool. Always a hit!

Mushroom Risotto

I made this for a dinner party, and it makes way more than four servings! All of it was eaten, though, and everyone thought I was magic or something. I did used skim milk and fat free half and half instead of whole milk and heavy cream, and it was plenty rich and creamy. Definitely worth the effort if you want to impress a date or a dinner party!

Best Carrot Cake Ever

Oh my dear God, this cake is divine. If you're a carrot cake fan, try this out. This was my first personal attempt at carrot cake, and it is the best one I've ever tasted!
