Caramel Pecan Ice Cream Dessert

One of the best deserts I've ever made! My husband goes GAGA over it. One thing I learned is that when making the crumble, you must use a baking pan and spread it thin. I used a glass baking dish one time, thinking I could just put the remaining ingredients in it once the crumble cooled - bad idea. It took twice as long for the crumble to bake and harden and then it was almost too hard. Save yourself the trouble and use a cookie sheet.

Hot 'n' Spicy Buffalo Chicken Salad

I used crumbled Feta in place of bleu cheese because my kids don't like it. It turned out great. Also, increased the amount of hot sauce to give it a little more kick. A keeper. Will make again.

Chicken Andouille Gumbo

The only thing I did differently was use kielbasa instead of andouille. I didn't have any. It turned out wonderfully anyway. My family loved it!

Angel Hair Pasta with Garlic Shrimp and Broccoli

I thought this was very tasty, but that the sauce was a little thick for my liking. It was more like an alfredo than a traditional scampi sauce. Will definitely make again, but I will dilute the sauce more next time.

Chicken Pot Pie IX

Excellent. My daughter said it needed more chicken and that the veggies were cooked perfectly. I followed others' advice and made 1-1/2 times the sauce and premixed it with the chicken/veggies before putting it in the crust. All I can say is yum! Not a piece left over.

Golden Rum Cake

This was a big hit this Christmas! We made small, holiday themed cakes for gifts and they received rave reviews. I must admit I kept one for myself - and almost wished I'd kept all of them after I tasted it. Soooooo good. The best rum cake I've ever eaten.
