Apricot Pork Tenderloin
This was "Holy Invite People Over For Dinner" Good!! The only change I did was to use a lovely Brandy since I had no Sherry. (There is a joke in there I know.) Quick and easy to prepare.

Caribbean-Spiced Roast Chicken
Used tequila and lemon juice. The basting is the key and the whole family loved it! Will make again. And again. And again!

Grilled Portobello Mushrooms
AWESOME! So simple to throw together and so full of flavor. Used roasted red peppers out of a jar and did the bake/broil option and it was wonderful. Next time want to do raw red pepper to begin and maybe add the splash of balsamic like one other reviewer did. A keeper for sure!
