Lamb Chops with Balsamic Reduction

I really enjoyed this, my 1st meal from "allrecipes.com". You did great with this, though I added a bit of a rue to this and thickened the reduction (a little). Not gravy, though thicker reduction. Something to think about.

Seafood Quiche

I modified this quite a bit: I used frozen shrimp, cream, 2 eggs, and chopped jack cheese. I added a pinch of chili pepper, black pepper, and sea salt. Mixed. Made hash browns from scratch with 3 small russet potatoes, sliced thin by hand, 2 TBSP minced onion and cooked stove top in peanut oil. Pressed potatoes into bottom of loaf pan. Poured mixture on top. Placed remaining cheese on top. Baked in toaster oven @375 for 45 minutes. Bad photo quality above, though you get the idea: it came out great. My wife loves it. That makes the work worth while. I hope this can be of some use to you, at the least some of it. Do let me know what you think.

Gorgonzola Stuffed Chicken Breasts Wrapped in Bacon

Used 1 pkg Blue Cheese & scallions. Dashed with Tobasco brand salt. Garlic powder (dash), black pepper and mixed all. Used 3 small chicken thighs (Foster Farms) and "rolled" the cheese mix within the thighs. Layed bacon on top of chicken. Used "thick cut" bacon. Baked in pre-heated toaster oven 50 minutes @ 375. PERFECT!!!

Steak Diane

I used wet mustard: Jack Daniel's Brown Mustard. My wife loved it. I enjoyed the mustard taste, so I used a lot. After cooking it, the flavor wasn't overpowering at all. I cooked it to a medium well. I didn't want it any pinker than it was when I finished. I added a slight twist: 1/4 tsp soy sauce. I think it added the right amount of flavoring that it was missing in it's sauce. So, this wasn't any longer a true "Steak Diane". I still found it very enjoyable.
