Chewy Chocolate Chip Oatmeal Cookies
These cookies are amazing, and should be given 5 stars, but I made some changes as others suggested. I added 1/4c flour, and omitted the salt (because my butter is salted). I also used old fashioned oats, as I didn't have any quick-cook oats. But my cookies turned out *perfectly*- soft and chewy and a little crunchy around the edges. And they did not flatten out at all- make sure you mix the wet ingredients with the blender for 4-5 mins, and only *just* incorporate the dry ingredients. I threw my dough in the fridge until I had time to bake them, and I am so so so glad with how they turned out. This will be the only oatmeal chocolate chip cookie I ever make again!

Low-Fat Blueberry Bran Muffins
This is the second time I've made these muffins and I just love them! As with others, I've made a few modifications- decreased the brown sugar to 1/2 cup, added 1 tsp cinnamon for more flavor, and also added 1 cup raspberries. The double berries make them SO decadent, and because there is no fat in the muffins, I don't feel a bit guilty about topping some nice warm muffins with butter and enjoying them with my morning coffee. This recipe is so perfect-you can freeze them to have leftovers for mornings where you are on the go and in a rush. Wonderful recipe!
