Apple, Beet and Avocado Salad

I loved this! I used fresh orange and red beets which added beautiful color. The dressing was fabulous-- it turned a bright red from soaking the beets in it. I made enough for 3 days and just stored the dressing and beets separately. It wasn't difficult to cook the beets at all. Great dish!

Pineapple Salsa

I added 1 tsp of lime juice to give the flavors more kick. And, I didn't have chili peppers so I used canned jalapenos instead. Very good!

Grilled Chicken Mojito Sandwich

Loved this! I've made this several times. The only changes I make are: cooking chicken breast in crock pot and mixing it all together like a chicken salad. I also substitute cayenne pepper instead of serrano chilis for convenience.

Sesame Udon Noodles

I sauteed my vegetables in the sesame oil instead and also added chicken to make it a meal. I also stir-fried the noodles for a few minutes in the sauce. These noodles absorb the sauce like a sponge if you let them simmer in the sauce for 10 minutes before serving. Broccoli is a great veggie to add because it also absorbs the flavors. Also, I was worried that the noodles would be under-cooked because my package said to cook for 13 minutes, but boiling for 3 and stir-frying for 3-4 minutes was perfect! I did not think this was too oily.

Pecan Rice

I added fresh pineapple at the end but salad was also good without it. I substituted chicken broth and added celery for crunch. I also used fresh ginger. Loved this recipe!

Ginger Dipping Sauce

Glazed Dijon Carrots

I substituted olive oil for the butter and maple syrup for the brown sugar (maple syrup has glycemic index of 0.) Very flavorful. We saved the left over dressing and used it on broccoli the next day which was just as delicious. I will definitely make this again!

Macadamia Nut Crusted Tilapia

I baked the fish at 350 for 15 minutes and broiled it for a minute. It would have burned otherwise. The topping is delicious! I normally need a lot of sauce with my fish but I skimped on the macadamia nuts and it still came out great. I will make this again.

Soba with Toasted Sesame Seed Sauce

I used half of the sugar (next time I will substitute maple syrup to make it 0 on glycemic index), doubled the noodle amount and tripled the sauce amount, then stir-fried it at the end. (Cook the soba noodles for only 3 minutes if you cook it this way and make sure to separate the soba noodles before placing them in the boiling water otherwise they stick together.) IT WAS FANTASTIC! I also added chili flakes and chicken and will add bell pepper next time. DELICIOUS! Hot, cold or room temperature.

Black Bean and Couscous Salad

Add 1 cup of raisins, quadruple the salad dressing, use fresh lemon juice instead of lime juice, add 4-5 paprika seasoned grilled chicken breasts. Five stars with these additions. Makes a lot of salad. Yum!

Ham and Brussels Sprout Bake

4.5 stars. I doubled the ham & sauerkraut but halved the oil as suggested by other reviews. Doubling ham + doubling sauerkraut= a little salty. I served with side of potatoes to lesson the saltiness. Next time I may add finely diced potatoes and more onion. This was otherwise delicious and so easy to make!

Festive Turkey Meatballs

Great recipe. For the sauce I used just pineapple juice for the honey and the dijon mustard which turned out great! I also used oatbran instead of bread crumbs. The meatballs didn't have a lot of flavor so I will double the spice ingredients next time and add crushed red pepper. It makes enough meatballs for 3 people for the main dish. I will make this again.

Cold Rice Salad

The vegetables remarkably bring in the flavor with this dish. I doubled the dressing because it was very light otherwise. I also steamed the broccoli for one minute then blanched it in cold water (tastes better than raw broccoli). Refridgerating this for an hour blends the flavors. I added walnuts at the end. I will make this again. Thanks.

Coconut Potatoes

I didn't care for this but my husband liked it. I dont think turmeric is the right seasoning for this dish. I cooked the potatoes in the oven at 400 degrees for 30 minutes then added them to the sauce. I used unsweetened cocounut milk which could have accounted for the lack of flavor.
