Unbelievable Pineapple Cake

This cake just did not turn out good. I skipped the walnuts because I didn't have any but stayed true to the rest of the recipe. First of all, it wasn't sweet enough, which really isn't that big a problem for me because the frosting would have sweetened it up. But the cake also left a bad taste in my mouth which I'm assuming is from the baking soda. Not a recipe I'd recommend.

Curried Coconut Chicken

Absolutely delicious! My family loved this dish. I did make some changes to the recipe - left out the tomato sauce and used only about 1 tsp of sugar. We had it with jasmine rice and steamed bok choi. Definitely a recipe that's here to stay.

Cranberry Muffins

These muffins are amazing! My husband, who generally does not like muffins, loved these! They were moist and had just the right amount of sweetness. Some of the other reviewers mentioned that they added milk to change the consistency so I added about 1/2 cup of buttermilk which really helped to make the batter smoother. Also, I added 1 tsp of cinnamon and used dried cranberries instead of fresh/frozen (they tasted great). Next time, though, I'll reduce the amount of nutmeg as it's kind of overpowering and also add much more lemon zest.

Easy Lasagna I

This is an update to my initial review below. The second time around, instead of spaghetti sauce, I used tomato sauce and added the following: 2 or 3 cloves of garlic (crushed), 1 tsp Italian seasoning, 1 1/2 tsp basil, 1/2 tsp black pepper and salt to taste. Also used chopped fresh mushrooms instead of canned. A tip for first timers - always end with the meat sauce as the last layer on top. If you finish with lasagna noodles, they do not cook well. ---------------------------------------------------------- Such an easy recipe! And absolutely delicious! Great for first time lasagna makers!!

Best Big, Fat, Chewy Chocolate Chip Cookie

Oh my goodness! This is the best chocolate chip cookie recipe ever! As promised in the title, they are big, fat and chewy and just melt in your mouth delicious. I have tried many chocolate chip cookie recipes and this is the first that hasn't turned out flat. They actually came out chunky, which is hard to get at high altitude! They aren't cakey either, as some other reviewers mentioned. Also, this recipe is super sweet, as other reviewers have mentioned. Like numb your taste buds sweet, which is saying a lot considering I have the biggest sweet tooth ever. Definitely need to cut the sugar. And you don't need 2 cups of chocolate chips either; 1 cup is perfect, or if you want a mouthful of chocolate in every bite, 1 1/2 cups will do it. Other than that, love em. This recipe's a keeper!

Baked French Fries II

Absolutely delicious! So simple and so much healthier than fried. I did alter the recipe a bit - used olive oil instead of cooking spray and also mixed all the ingredients together with the potato strips before spreading them on the baking sheet. I liked it with Parmesan cheese but my husband didn't so I'll probably leave the cheese out next time.

The Best Lemon Bars

Fantastic! The crust is absolute perfection, light and buttery and just the right amount of sweetness. For the filling, I followed the advice of other reviewers and used the juice of 3 lemons (about 2/3 cup) and the zest of 2. You really do need that much if you want that nice tart flavor of the lemon to come through, which is how lemon bars should be. If you prefer it mild, then the original recipe will work.
