Coconut-Cream Cheese Frosting

Forget the store-bought frostings! This is so easy to make and soooo yummy! I didn't have any coconut extract, but I did use coconut cream instead of heavy cream. Absolutely wonderful. Thank you for sharing!

Pumpkin Cheesecake II

This is by far my family's favorite cheesecake recipe. To avoid cracks on the top, I turn the oven off after 50 minute baking time. (Leave cheesecake in oven.) 5 minutes later, I pop open the oven door a little bit and allow the cheesecake to cool inside the oven until the pan is cool enough to touch. I then transfer to a wire rack and allow it to cool completely. Be sure to refrigerate overnight too. This cheesecake is worth all the work and time. Thanks for sharing!

Best Peanut Butter Cookies Ever

Wow! Very good! I only made half a batch and added 1 TBS of flour and 2 TBS of milk as recommended by one reviewer. (Double if you are making a whole batch.) And they came out PERFECT. So good! Thanks for sharing!

Italian Cream Cake I

I did not have buttermilk, so I used heavy cream as suggested by other reviewers. The cake turned out good and moist, however my husband and kids did not care for the coconut in the cake. I did have to double the frosting to ice entire cake. No need to double the sugar in the frosting though. It is very sweet without adding double the sugar.

Amazing Italian Lemon Butter Chicken

Sorry, but our family did not like this dish. WAY too much butter and too lemony. I wish I had read the reviews before making, as I would have at least tried using less butter. This is probably one of the least healthy recipes I have ever seen. Just check out the nutrition information on it. It has 35.3 g of saturated fat! That's 177% of the daily value. This was not worth all the fat and calories.

Strawberry Spinach Salad I

Very good! Next time I will use a lighter olive oil, though. I only had the "Rich Taste" olive oil and it was a little too heavy. This is definitely a keeper.

Tres Leches (Milk Cake)

This is my husband's favorite cake. The soggier the better! However, the frosting was a little too sweet so I reduced the amount of sugar to just 1/3 cup, and it still tastes great.

Sandy's Chocolate Cake

I halved the recipe and baked in two 9-inch round pans for 25 minutes. I didn't have enough butter for the frosting so I topped with the Whipped Cream Cheese Frosting found here on AllRecipes. YUM!!! This is a definite keeper. Thank you for sharing!

Easy Peach Cobbler

This was pretty good, but like one reviewer mentioned, don't add water if using fresh peaches. Mine came out very runny too. Next time I will not add the water, or perhaps add some cornstarch to thicken it up as it cooks. Otherwise, pretty tasty.

Mushroom Chicken Piccata

Yum! I have been looking for a recipe similar to a dish at my favorite Italian restaurant and this is it!!! It is SO good! I did add minced garlic and some marinated artichokes to mimic the restaurant's version. I agree with other reviewers that the chicken doesn't really need the breading. Next time I will do without it. Thanks for sharing!

Foolproof Rib Roast

Very good! And so easy to prepare! I was hesitant on the given cooking method so I just baked at 350 until roast reached 160 degrees F. (medium doneness) Perfect!

Texas Sheet Cake III

I was a little disappointed in this cake. Was hoping for a chocolatey, melt-in-your-mouth kind of cake, but this was not it for me. The cake portion was a little bland and the frosting was too sugary.
