Jen's Heavenly Egg Salad
I don't think I've ever had egg salad before, so I don't know what it is supposed to taste like. But I'm now a convert -- this was delicious. I was cautious about adding the lemon juice after reading other reviews, but ended up using all the juice from half a lemon as called for in the recipe. I don't see what the problem is. I didn't have any green onions, but I added a little diced red pepper, which was very good. I don't think I would have liked this as much without the added crunch and flavor pop of the peppers. A little diced pickle would probably push this over the top for me. Yum.

This was delicious and I love that it is packed with nutrition, but I made it with a 1/4 cup of olive oil instead of a cup of butter. And even that seemed excessive. I might try half that next time. I used frozen lima beans (all I could find), a can of diced tomatoes (didn't feel like peeling fresh tomatoes), and fresh corn--just two ears, because they were big, and the proportions seemed right that way. I also used the one-pot method--10 minutes for beans then 20 after adding the tomatoes and corn. Texture was great--just a little crunch. My toddler refused to eat the lima beans, but my husband and I loved it.

Carrot Cake Muffins with Cinnamon Glaze
These are good but a bit bland, even though I accidentally used 2 tablespoons of cinnamon instead of 2 teaspoons. I also thought they were too sweet, even though I did not use the glaze. Still, a good recipe to start from. Next time I will use 2 T cinnamon, 1/2 tsp nutmeg, 1/2 tsp allspice, no white sugar, and add plumped raisins. I'll also chop the pineapple in a food processor before adding it--I didn't care for the chunks. I got 20 muffins, but I like to fill my cups mostly full for a nicely rounded muffin. When I calculated the calories for this recipe, I came up with 210 calories each (for 24 muffins) WITHOUT the glaze.
