Jambalaya II

Great Recipe. Made only a few changes. Used a pack of boneless, skinless chicken breast rather than the whole chicken. Used one large onion & one large bell pepper and extra garlic. Mixture was very thick, so I chose to cook my rice separately in chicken broth and then served the stew over the rice. Very good!

Breakfast Muffins

Was disappointed. Too crumbly, not much flavor, not sweet enough. Would not make again. I used nectarines in mine & even added sugar to the fruit & added vanilla, but still wasn't very good.

Roasted Vegetables

Good basic recipe. I used the veggies I had on hand: broccoli, cauliflower, sweet onion, fresh mushrooms, carrots, and zucchini. I doubled the balsamic vinegar. I did not have the fresh herbs on hand so I added dried Italian seasoning also added fresh garlic. Be sure to cut your veggies in larger chunks so they don't burn. It only took mine about 20 minutes.

Hash Brown Quiche

Good recipe. I liked it, others didn't like it as well. I did use bacon since I didn't have ham. Next time, would probably double the eggs & milk. Two did not make it very fluffy.

Chicken and Dumplings III

Great Recipe. Made a few changes. I realized I did not have any chicken broth so I cooked my boneless chicken with enough water to cover, seasoned it with Nature's Seasoning, chopped onions, celery, carrots, a bay leaf and some thyme and pepper. I cooked it for about an hour til it was falling apart. I removed the chicken & shredded it. I removed the chopped vegetables and just used the broth then added the cream soups (used 1.5 cans), milk, and for a richer flavor- I added a small can of evaporated milk also. I mixed and cooked the dumplings as directed. It was a great meal. Thanks for sharing.

Apple Pork Chops

Baked Ziti I

Very good recipe. I used a larger pan so it would all fit without overflowing. I used half Italian sausage & half ground beef. I added Italian seasoning and minced garlic to the meat. I mixed the ziti in with the sauce before layering. I reduced the sour cream to only about 1 cup. I used 2 1/2 jars of sauce (Classico). Everyone enjoyed it. It also reheats well for leftovers the next day.

Chocolate Chip Pie I

This was okay but not as good as I expected with all the rave reviews. I followed the directions exactly except I used a graham cracker crust (extra serving size) and used pecans rather than walnuts. I served it warm out of the oven. Everyone ate it, but no rave reviews. Don't know if I would make again.

Easy Guacamole

Good Recipe! Rather than the adding the onion & tomato, I use a couple of tablespoons of salsa. I mash the salsa in with the avocado. Add a teaspoon of sour cream at the end for a creamier texture. The sour cream also helps it from turning that ugly green-brown the next day if you have leftovers.

Ultimate Twice Baked Potatoes

Easy Slow Cooker French Dip

Great recipe! I added lots of garlic to the broth. I sauteed fresh mushrooms and onion to top the sandwich then added the cheese of choice (cheddar, swiss, provolone) and baked in the oven till hot & bubbly. This is a staple at our house.

Best Cream Of Broccoli Soup

This a good soup with great broccoli flavor. Of course, you do have to get over the army green color. I added minced garlic in with the celery and onion. I used 2 cans of chicken broth to cook the fresh broccoli. For the roux, I used one small can of evaporated milk as part of milk for a richer flavor. The soup was even better reheated the next day!

Beer Butt Chicken

This was a good recipe that turned out very moist. If I cook it again, I will marinate the chicken overnight for more flavor. I baked the chicken in the oven at 350 for 1 1/2 hours. I used the bottom of a broiler pan which I sprayed with Pam and lined with foil for easier cleaning. Be prepared for the smell as the drippings and butter burn on the pan as the chicken bakes.

Tater Tot Bake

Great simple recipe. I followed the advice and mixed in the soup with the meat mixture. I used a small can of evaporated milk instead of regular milk. I added minced garlic to the meat. Also, when the meat was browned I added a couple of dashes of worcestershire and a couple of tablespoons of A1 steak sauce. It was even better reheated for lunch the next day!
