Corn Dog Casserole

Cabbage Rolls II

All I can say is YUM! This is a great recipe. The sauce is absolutely delicious with the cabbage rolls. I doubled the sauce, but next time I will make more so that the rolls are nice and covered. A definite keeper.

Spicy Peach-Glazed Pork Chops

This is a good change to other more basic pork dishes. The sauce is great-not too sweet and not too strong. Next time I need to make some mashed potatoes or something to put the sauce over.

Upside Down Pumpkin Cake

This was a great recipe. The only change I would make would be to add a little more cinnamon and sugar to the pumpking mixture. Also, don't make the mistake I did-I only used half of the cake mix (because it covered the top)-and now I wish I had used it all!

Artichoke & Spinach Dip Restaurant Style

This turned out as good as most restaurant versions of this dip. I did like others suggested and chopped the spinach and artichokes in a food processor-which is good so you don't end up with huge pieces of spinach or artichokes in the dip. The store only had marinated artichokes, so the artichoke flavor was a little stronger, but I like artichokes so that was alright with me. Next time I am going to add some extra cheese on top and broil it after baking it to get the top nice and golden.

Coconut Shrimp I

These turned out great. I did not use large shrimp and had no problem battering them. To help keep the coconut on the shrimp while frying, I gently pressed the coconut into the batter and I let the shrimp chill for about an hour before I actually started frying them. I had very little coconut come off during frying doing it that way. Next time I make these I will definately try that sauce some have mentioned.

Easy Guacamole

This is a great guacamole recipe. Just how I like it. I did not have any lime juice on hand so I substituted lemon juice. My mom says this beats every store-bought or restaurant's guacamole.

Hummus I

This was a good basic hummus recipe. The only thing I would change next time is to decrease the amount of tahini because the flavor was a little too strong. Also, I would not recommend using a blender for this (unless you have a super high quality one). This hummus was just too much for my poor little blender and it bent the blades! But that's ok-it still works, just next time I will drag out my food processor.

English Trifle

This is a nice, basic trifle. It does make quite a bit, but the leftovers are still great. Mine were not runny or mushy at all. I will definately make this when I need an easy dessert for a group of people.

Chicken With Mushrooms

This was a easy, tasty chicken dish. I did as another reviewer suggested and sauted the mushrooms and threw in some onions and garlic with the mushrooms. Next time I will definately double the amount of mushrooms because there wasn't enough for my family.

Pumpkin Butter

When I was canning the pumpkin butter, I wasn't very optimistic about the butter because the product tasted too sweet and seemed a little too over-spiced. However, when I got up the next morning and opened a can to taste-it was AMAZING. It wasn't too sweet and it did taste like a pumpkin pie! The only change I made to the recipe was that I only used 2/3 cup of apple juice. Also, I only had 4 half pints instead of 5. But if you love pumpkin pie-try this!

Garlic Pork Roast

This was a tasty and easy pot roast. The garlic did not overwhelm the flavor of the roast or the veggies. When it was time to serve the roast was so tender it was just falling apart.

Six Can Chicken Tortilla Soup

This recipe couldn't have been any easier. Instead of canned chicken I used chicken breasts and just cooked them in the chicken broth with some added cumin and cilantro. Then I chopped up the chicken tossed it back in, threw in the rest of the ingredients (along with an extra can of chicken stock) and let it heat through.

Chocolate Eclair Dessert

This was quick and easy to make. My mom was already asking me to make it another time after her first bite. I only let it chill for about 5 hours before serving and the graham crackers had softened enough.

Special Buttercream Frosting

Yum! I am not a huge frosting person, but I was able to lick the bowl completely clean! It has the taste of bakery buttercream frostings. This recipe makes enough to frost 2 layer cakes. I happened to make two cakes on this occasion, but for future times I will half the recipe.
