Blueberry Waffles with Fast Blueberry Sauce

This was a good recipe, and if you love blueberries you should love this recipe. For personal preferences I will add some sugar to the batter so that the waffles taste slightly sweet.

Carrots Au Gratin

Pumpkin Butter

When I was canning the pumpkin butter, I wasn't very optimistic about the butter because the product tasted too sweet and seemed a little too over-spiced. However, when I got up the next morning and opened a can to taste-it was AMAZING. It wasn't too sweet and it did taste like a pumpkin pie! The only change I made to the recipe was that I only used 2/3 cup of apple juice. Also, I only had 4 half pints instead of 5. But if you love pumpkin pie-try this!

Banana Blast II

Garlic Pork Roast

This was a tasty and easy pot roast. The garlic did not overwhelm the flavor of the roast or the veggies. When it was time to serve the roast was so tender it was just falling apart.

Kitty Litter Cake

This is a funny cake to make. My brother refused to eat it, but everyone else in my family tried it. It is a tasty cake, but not something I would make just for the taste of it alone. If you need a cake for shock value and taste-this is it!

Chicken With Mushrooms

This was a easy, tasty chicken dish. I did as another reviewer suggested and sauted the mushrooms and threw in some onions and garlic with the mushrooms. Next time I will definately double the amount of mushrooms because there wasn't enough for my family.

Mushroom Pork Chops

Catfish Cakes

Yum! I am not a huge fan of catfish but these were great. I used 2 lbs of catfish and doubled all the ingredients except for the cracker crumbs (the double batch was holding together with just the 2.5 cups of crushed crackers).

Six Can Chicken Tortilla Soup

This recipe couldn't have been any easier. Instead of canned chicken I used chicken breasts and just cooked them in the chicken broth with some added cumin and cilantro. Then I chopped up the chicken tossed it back in, threw in the rest of the ingredients (along with an extra can of chicken stock) and let it heat through.

Broccoli Cheese Cornbread

This was a tasty cornbread. I added some shredded cheese with mine and sprinkled a little extra on top. I did have to bake my cornbread much longer, but it was because of the pan I used.

Chocolate Eclair Dessert

This was quick and easy to make. My mom was already asking me to make it another time after her first bite. I only let it chill for about 5 hours before serving and the graham crackers had softened enough.

Rich and Creamy Tomato Basil Soup

This was a great recipe. It was smooth and creamy. I personally thought it had a little too much cream and butter, so next time I make it I will cut back to like 1/4 c butter and 3/4 c. cream. On the other hand, my mom thought it was great just as it was. I would suggest adding about half of the cream/butter then tasting and add more if your tastes say to.

Hummus I

This was a good basic hummus recipe. The only thing I would change next time is to decrease the amount of tahini because the flavor was a little too strong. Also, I would not recommend using a blender for this (unless you have a super high quality one). This hummus was just too much for my poor little blender and it bent the blades! But that's ok-it still works, just next time I will drag out my food processor.

Coconut Shrimp I

These turned out great. I did not use large shrimp and had no problem battering them. To help keep the coconut on the shrimp while frying, I gently pressed the coconut into the batter and I let the shrimp chill for about an hour before I actually started frying them. I had very little coconut come off during frying doing it that way. Next time I make these I will definately try that sauce some have mentioned.

Awesome Sausage, Apple and Cranberry Stuffing

This was a good stuffing. Next time I will reduce the amount of rosemary (personal preference) and add extra cranberries and apples. I am also going to try it with cornbread. This won't replace our usual Thanksgiving stuffing, but this will be a nice addition to occasional dinners.
