Easy Sugar Cookies

These cookies were perfect! I added an extra 1/2 tsp. of vanilla, and after baking I brushed the cookies with milk and spinkled them with colored sugar. Everyone loved them!! Also, I didn't realize it but I used 2 cookie sheets instead of 1...the bottoms came out perfect - never too dark.

Rosemary Chicken Couscous Salad

This was a delicious recipe! Great combination of flavors - I was tempted to leave out the olives but I'm glad I added them - the kalamata's added a delicious, subtle taste. To make it a little lighter, I used much less oil and whole wheat couscous. You can also used reduced fat feta to cut out some more fat. I also sauteed the chicken in a balsamic marinade to give it extra flavor. The second time I made this I used fig flavored white balsamic which was delish! Update - made again replacing sundried tomatoes and olives with dried cranberries and chickpeas. Also used a honey flavored rotisserie chicken. It worked great for a sweeter option (can also use goat cheese instead of feta)

Strawberry-Mango Mesclun Salad

What a great summer recipe! I served it with Rosemary Chicken Couscous Salad from this site. I used Splenda and less olive oil to make it lighter, and I left out the onion although a sweet one might have been nice (didn't miss it though). This salad would be great with grilled chicken, and I think it might work with some fresh mint...and a nice mojito!

Best Marinara Sauce Yet

This was delicious. I had tomatoes from the garden so I made the following changes: - cut an x on the bottom of the tomatoes - boiled and seeded them (although the seeds should disintegrate if you leave them in) - used less oil to make it healthier - added 1 tsp red pepper flakes - added mushrooms and a yellow pepper that were about to go bad. This ended up being delicious! - added 1/2 tb brown sugar (the Splenda blend just because that's what I had) to balance the acidity - added some garlic powder and dried basil at the end just for more flavor. I served with turkey meatballs and whole wheat pasta.

Double Tomato Bruschetta

This recipe was delicious! I used fresh tomatoes from the garden, as well as homemade sourdough bread. I bought fresh mozzarella from an Italian deli and put some slivers on top. I baked the bread before I put on the mixture, but I did not top with oil as some suggested - it was delicious and skipped unnecessary fat. Next time I will even use a bit less oil.

Teriyaki Sauce and Marinade

I used Splenda to make it healthier, and added more crushed red pepper for flavor. I marinated chicken and cooked with broccoli, water chestnuts, garlic, and a touch of ginger (and more red pepper of course). My boyfriend cleaned his plate and then the pan I cooked in!

Chocolate Chip Coffee Cake

The cake was delicious, although I highly recommend the following: - serve cold...just out of the fridge. The chips taste delicious that way. - add 1 1/2 cups chocolate chips. Some people said 2 cups which I found to be too much - add half semi sweet chips and half milk chocolate - otherwise I found it a bit bitter.

Terrific Turkey Chili

This recipe was very good. It has an excellent flavor. I made the following changes: - cooked onion first and added garlic. Browned the meat with the onion & garlic to enhance flavor - added about 1tb brown sugar....this was so key! - added CORN - so delicious!! - served with fat free sour cream mixed with scallions, yellow rice, and more corn kernels. And of course Coronas!

Good Old Fashioned Pancakes

These were SO good! I followed the recipe but added 1 1/2 tsp vanilla and also let the batter sit for an hour before cooking. The pancakes came out so fluffy!

These did not come out as tasty as I hoped. Maybe because I used America's Choice biscuit dough? I'll definitely try again, because it's a nice app, but I'll try the brand name ingredients next time.

Baked Slow Cooker Chicken

This came out so moist and delicious! I removed the skin before cooking. I don't think the aluminum foil balls are necessary - mine kept sliding off anyway...and I'm thinking maybe that's why it was so moist. I will definitely make again - SO EASY!!! I paired this with roasted pumpkin, sweet potatoes, eggplant, and whole garlic cloves (baked with olive oil, salt, pepper, and rosemary.

Real Hummus

Made the recipe as is, except removed the skins from the chickpeas beforehand. At first I thought it was too lemony, but the next day the flavors set in to make it much better. Next time I will use dried chickpeas that I soak overnight with 1 tb baking powder, drain and rinse, then simmer for 2-3 hrs. I like the taste and consistency much better that way. I might also add a bit of plain yogurt to make the consistency more creamy.

Sweet Potato Pie I

Followed recipe as is (just added 1 tb of flour to thicken). It was good, but could have used something to make it special. Next time I will line the rim with pecans and possibly make a graham cracker crust instead. I will also try using a touch of lemon juice as some suggested - I totally forgot.

Downeast Maine Pumpkin Bread

I made mini muffins with this recipe, and used 1/2 applesauce 1/2 oil and also substituted the sugar for the Splenda bron sugar blend. It was very good and light, but could have used something...next time I will make with walnuts.

Monkey Bread I

Made the recipe as is, without the optional nuts or raisins. It was a huge hit at the party, and super-easy to make! I used buttermilk biscuit dough (Pillsbury). Next time I will try adding some pecans and raisins.

Hudson's Baked Tilapia with Dill Sauce

This was delicious and so easy! I didn't have cajun seasoning so I used adobo and chili powder. I also used fat free sour cream and low fat mayo to make it healthier. Served with steamed broccoli and sweet potatoes.

Sweet and Nutty Moroccan Couscous

OK - this DEFINITELY needs at least 1 cup or even 2 cups of additional stock. I am middle eastern, too, and this is not how couscous is supposed to be - even when served with a liquidy dish, which I did. Other than that, I loved the flavors and texture (I also added dried figs). I might even add more fruit next time. Served with Israeli Moroccan Couscous from this site.

Baked Teriyaki Chicken

Delicious! Made exactly as directed, except I removed the skins before baking. It probably didn't need the last 10 minutes of cooking. Next time I will cook for 50 minutes and serve.

Spicy Spaghetti Squash

Pretty good. I used dried oregano instead of fresh which was a bit overpowering. Next time will add a small amount of brown sugar to balance the flavors.
