Tofu Salad

This dish was very flavorful and refreshing. I doubled the sauce as other suggested. I ended up adding a lot of flavoring at the end as well (including rice wine vinegar and teriyaki sauce). I also sauteed the tofu for a few minutes and let cool before combining.

Sour Cream Pork Chops

These were phenominal! I followed the recipe exactly exept for small tweeks - I added a generous amt of salt, pepper, garlic powder and sazon to the flour before browning. To cut down fat, I used fat free sour cream and Pam in place of oil, and it came out perfect. Very easy and delicious.

Vegetarian Chickpea Sandwich Filling

This was delicious! I added raisons which really added a nice sweetness to the dish, and used fresh dill and low fat mayo. I also removed the skins from the chickpeas - I'm not sure how necessary this is, but it's how I was taught by my father and I think it makes the consistancy much smoother. You just rub each chickpea between two fingers and the skin slides right off.

Spicy Slow Cooker Black Bean Soup

This was delicious! I soaked the beans overnight but also boiled them before adding them to the slowcooker. I also pureed about half the soup for a somewhat smoother consistency (but still chunky). It was SPICY! We loved it but for company I might tone it down a notch.

Caramel Popcorn

This was delicious. Followed the recipe as is but with half the butter and a brown sugar Splenda blend. Used 94% fat free Kettle Corn flavored popcorn. Next time I will try it in the microwave as some suggested.

Potato Chips

So much fun! They need to cook for 6 - 7 minutes in the microwave. I tried it with olive oil and PAM, both came out great. Since I have a small microwave, I kept the cooked chips in the oven on a low setting until they were all ready. I made two different toppings - salt & chili powder, and salt and Israeli hot paprika. You can really get creative. So good!

Laura's Quick Slow Cooker Turkey Chili

This recipe was so easy and delicious. I made the following changes - I browned the turkey meat with the onion before slow cooking - I replaced the soup with 1 can of chopped tomatoes with chiles - I added a can of corn Other than that I followed the recipe exactly. It is not too spicy - you could even add more spice or a can of jalepenos if you like spicy. Next time I will try to add butternut squash...I love the combo.

Quinoa and Black Beans

This was delicious! Would have given it 5 stars but let's just say it tasted better than it looked. Three notes - the quinoa should be rinsed first to remove any powder. Also, when it was ready I topped with crumbled feta cheese which added a great flavor. I also used just one can of beans - two would have been too much. I plan to use the leftovers to make wraps with grilled chicken.

Fruited Curry Chicken Salad

So amazing. I've done two variations on the chicken - once I put the chicken breasts in the slow cooker over night so they were nice and pulled, the second time I got a honey flavored rotisserie from the supermarket. I also used light mayo, toasted almonds instead of pecans, scallions instead of onions, red grapes for color, and some garlic powder for flavor. DELISH!!

Spicy Spaghetti Squash

Pretty good. I used dried oregano instead of fresh which was a bit overpowering. Next time will add a small amount of brown sugar to balance the flavors.

Baked Teriyaki Chicken

Delicious! Made exactly as directed, except I removed the skins before baking. It probably didn't need the last 10 minutes of cooking. Next time I will cook for 50 minutes and serve.

Sweet and Nutty Moroccan Couscous

OK - this DEFINITELY needs at least 1 cup or even 2 cups of additional stock. I am middle eastern, too, and this is not how couscous is supposed to be - even when served with a liquidy dish, which I did. Other than that, I loved the flavors and texture (I also added dried figs). I might even add more fruit next time. Served with Israeli Moroccan Couscous from this site.

Hudson's Baked Tilapia with Dill Sauce

This was delicious and so easy! I didn't have cajun seasoning so I used adobo and chili powder. I also used fat free sour cream and low fat mayo to make it healthier. Served with steamed broccoli and sweet potatoes.

Monkey Bread I

Made the recipe as is, without the optional nuts or raisins. It was a huge hit at the party, and super-easy to make! I used buttermilk biscuit dough (Pillsbury). Next time I will try adding some pecans and raisins.

Downeast Maine Pumpkin Bread

I made mini muffins with this recipe, and used 1/2 applesauce 1/2 oil and also substituted the sugar for the Splenda bron sugar blend. It was very good and light, but could have used something...next time I will make with walnuts.
