Actually Delicious Turkey Burgers

These were amazing! So much flavor. The only changes I made was to use shallots in place of onion and added 1 1/2 eggs with yolk. So easy and tasty.

Banana Sour Cream Bread

Made this exactly as is, but used 2/3 splenda and 1/3 sugar. It was moist and tasty - I gave it 4 stars because it would be even better with a crumb topping (and chocolate chips!)

Bourbon Chicken

This was great! I baked at 350 and it was ready in much less time. I added a bit of vanilla to the sauce before marinating. I also poked holes in the chicken with a fork before marinating which really enhanced the flavor.

Rosemary Lemon Grilled Chicken

I was looking for a recipe to use leftover rosemary and this one was great! I cut the chicken into pieces and made stovetop. It's like a rosemary pesto - very creative.

Baked Falafel

this was delicious - I sauteed the onion and garlic with a little olive oil, and used whole wheat flour because that's all I had. I didn't sauté the patties but baked them at 400 for 30 min. Served with pita, hummus, israeli pickles and olives and sweet potatoes. Perfect meal! Next time I will make smaller balls instead of patties. Thanks Bette!!

Chocolate Mint Candies Cookies

Mmmm!!! If you're not eating them in a day or 2, definitely freeze. They thaw well. I also added some crushed candy canes to the top before it dried for a little extra mint and texture.

Butternut Squash Soup with Sage

This was amazing. Only thing I did different was roast the butternut squash in the oven with olive oil, salt and pepper @ 475 for 35 min. Next time I may add some sage to that step. I also used one big fuji apple. I made a similar recipe from food and wine mag which used popcorn as a garnish, which was a big hit! Update - I left some sage in the leftover soup, and the next day it was very sage-y! I had to cover it up with agave nectar. Even 2-3 sage leaves become very strong overnight.

Turkey and Quinoa Meatloaf

This was delicious! I made exactly as is, except with ground chicken since it was on sale, and brown sugar splenda blend to cut down on sugar. Next time I will probably use a loaf pan just to keep the shape and so the topping stays on top (maybe next time I will also use less water for the topping). I've been trying to find a way to sneak quinoa into our meals - I love it but my husband thinks it's gross. He had no idea this meal was so healthy : ) Thanks Drew!

Pork Chops for the Slow Cooker

This was delicious and SO EASY! I made with bone-in pork chops (trimmed), and followed some suggestions and added some corn starch and honey. I just realized I didn't even add any salt or pepper - it didn't need it!

Coconut Curry Tofu

This was delicious. I used a different mix of veggies (what I had on hand - squash, red pepper, shredded carrots). I also ran out of soy sauce so I used half teriyaki. The basil and scallions add a nice touch. I also added about 1 tb. ground flaxseed.

Chicken Asparagus Roll-Ups

Considering how easy this was to make, it was DELICIOUS!! I only substituted the dijon with honey dijon. Other than that made as is. I may go a little liter on the spices and lemon zest next time, but I will definitely be making this again.

Healthy Turkey Loaf

My husband couldn't get enough of this. But I do have some important notes. Many people use will double this recipe since some packaged ground turkey comes in 1 lb. and 1 lb. also fits a loaf pan. If you double the recipe, be sure to stick to the exact doubled measurements or it will overflow. You also have to increase the oven temp to 375 and increase time to 50 - 60 minutes. I also made a ketchup mix (with worcestershire and salsa) and put it on top with some more sliced onions. It really is delicious and EASY!

Tofu Salad

This dish was very flavorful and refreshing. I doubled the sauce as other suggested. I ended up adding a lot of flavoring at the end as well (including rice wine vinegar and teriyaki sauce). I also sauteed the tofu for a few minutes and let cool before combining.

Sour Cream Pork Chops

These were phenominal! I followed the recipe exactly exept for small tweeks - I added a generous amt of salt, pepper, garlic powder and sazon to the flour before browning. To cut down fat, I used fat free sour cream and Pam in place of oil, and it came out perfect. Very easy and delicious.

Vegetarian Chickpea Sandwich Filling

This was delicious! I added raisons which really added a nice sweetness to the dish, and used fresh dill and low fat mayo. I also removed the skins from the chickpeas - I'm not sure how necessary this is, but it's how I was taught by my father and I think it makes the consistancy much smoother. You just rub each chickpea between two fingers and the skin slides right off.

Spicy Slow Cooker Black Bean Soup

This was delicious! I soaked the beans overnight but also boiled them before adding them to the slowcooker. I also pureed about half the soup for a somewhat smoother consistency (but still chunky). It was SPICY! We loved it but for company I might tone it down a notch.

Caramel Popcorn

This was delicious. Followed the recipe as is but with half the butter and a brown sugar Splenda blend. Used 94% fat free Kettle Corn flavored popcorn. Next time I will try it in the microwave as some suggested.
