Nice change from the ordinary meatball fare!! I did not pan fry them though, i baked them in the oven at 425 degrees for 15 mins. Then i put the other ingredients in the skillet and added the meatballs.Turned out great!

Jenny's Jambalaya

Reviewed: Nov. 5, 2007
Delicious! My 8yr and 11yr old daughters helped me make this and the whole family loved it! We cooked it on the stove top, I don't have an electric skillet. I also seasoned the chicken with Old Bay seasoning and baked it in a 375 oven for 2o minutes. Then shredded the chicken. Thanks for the great recipe! The girls want to fix it regularly, and that is saying something!

Autumn Spice Ham Steak

Reviewed: Nov. 17, 2007
We loved it! It is actually similar to what I do already to ham steaks. But the difference is I never thought to add apples. After reading the reviews I decided to cook the ham, then remove them from the skillet and add the apples to cook seperately. Then i returned the ham to the skillet. Perfect! I was afraid the apples would not soften enough. I used granny smith apples. Good recipe! Thanks!

California Chicken Spaghetti

Reviewed: Feb. 6, 2008
Very good! I too used canned diced tomatoes (2 cans garlic and olive oil) The cajun was too spicy for my daughters, they are picky! I love spicy! Next time I will decrease the amount of cajun seasoning. The Feta was a hit with everyone in the family. This will be a regular at our home! Oh, and for those not using fresh basil...one tsp. of dried basil is plenty. But fresh is way better! Thanks for the great recipe!

Cincinnati-Style Chili

Reviewed: Feb. 18, 2008
Well, I have to say that reading the other reviews has been really funny! Seems there is a different version of this from everyone that considers themselves an expert on the subject. Bottom line is that this is a good recipe regardless. The fact that it has chocolate in it makes it a non-traditional chili, so not everyone will like it! I fixed it for a big family get together and we all thought it was very good! I think it would be better to stop hearing how authentic it is and just plain old "do we like the recipe?" What is good about this recipe or not good based on our preferences. There are a zillion "skyline" recipes on this site and no two are the same! Will the real Skyline Chili please stand up! Sorry could not resist.

Awesome Carrot Cake with Cream Cheese Frosting

Reviewed: Mar. 23, 2008
Very good cake! Like some others I only used 1 cup of sugar and 1/2 cup of oil. To make up the difference in oil I used all natural applesauce, about 6 ounces. And because it was easier, Betty Crocker made the Whipped cream cheese frosting:)

Chicken Enchiladas I

Reviewed: Apr. 21, 2008
Very good! Two things though. #1 cube the chicken before you cook it, much faster. #2 to cut down on the watery problem but still have a tomato flavor, tomato paste. Other than that I did everything else the same. Quick and yummy!

Easy Tuna Casserole

Reviewed: Jul. 2, 2008
My family loved it! I did use cream of mushroom, but will try the cream of chicken too! I also added 1 can of milk. Next time I will use 2 cans of soup and maybe some sour cream for a creamier texture. Just a personal preference! Thanks for sharing this recipe!
