Quick and Easy Pizza Crust

Awesome crust. Easy to make, easy to double. Can be made ahead, partially cooked and frozen...so easy and quick, though, why bother when it can be fresh?

Pepper Jelly Appetizer

My mom has been serving green pepper jelly and cream cheese for years...but she goes one step beyond and makes her own pepper jelly. Always rave reviews. Use leftover jelly to glaze chicken or pork.

Amazing Whole Wheat Pizza Crust

Really tasty - even the picky 4 y.o. ate it. Followed others reccommendation and used only whole wheat, but used King Arthur whole wheat white flour. Made 2 large crusts, par baked each for 10 minutes and thoroughly cooled them. Wrapped them in freezer wrap and put them in the freezer. When I got around to using them I defrosted them and topped as usual (plain cheese and buffalo chicken - YUM). Baked at 425 until golden and bubbly, roughly 10 min. Excellent to have on hand when I don't feel like cooking. Making calzones tonight, plus extra crusts for the freezer!

Caribbean Nachos

In the midst of watching the Pats game and eating these nachos. Everyone loves them, a great twist on a game-time favorite. Used the smallest shrimp I could find (salad shrimp) and they are just the right size. Don't know if we'll have room for the half-time pizza!

High Temperature Eye-of-Round Roast

Make sure that your meat is at room temp before placing in the oven. I cut that corner last time and ended up with an extremely rare middle. To rectify the situation I place the rarest cuts on the stovetop in a gravy that I had made from the pan drippings. Even with the mishap, still no complaints at the table!

Cherry Tomato Salad

Delicious with a variety of tomatoes from the garden. Added chopped fennel fronds and chives (instead of green onions), used Splenda (a diabetic in the family) and it was still excellent. I go to this recipe over and over when tomatoes are plentiful.

Ultimo's No-Bake Blueberry Squares

Have made this at least a dozen times to rave reviews. Made it with Splenda for the diabetics in the family and no one can really tell the difference, also with lowfat cream cheese and cool-whip. Fresh blueberries are also great, as are raspberries. Have not tried strawberries, but I'd bet they are great, too.

Lemon-Butter Snow Peas

Had an abundance of snow peas from the garden and wanted something non-asian flavored to go with our meal. Didn't have lemons on hand so used some dried citrus peel and let it steep in the melted butter while the peas cooked. Nice and crisp, the flavors complimented the peas well.
