No-Mayonnaise Ranch Dressing

This does not taste like ranch. It's very much a seasoned sour cream. If you add 1-2 t. of vinegar it gets better, but it's still just not ranch. Sorry!

Juicy Peach Crisp

Be warned, if you're peaches are overripe and very juicy (or if you blanch them to peel), the topping will just melt into the peaches as it cooks. I had a few areas of crispy, but only on top of tall chunks of peaches. The flavor was good though.

Best Brownies

You can compare this to a thin, moist cake with decent flavor, but I would not call it a brownie by any stretch. If you're looking for a chewy, gooey brownie, look elsewhere.

The Best Oatmeal Cookies

These are really good. For those that want a REALLY chewy cookie... The second time I made them, I used bread flour instead of all purpose, an egg yolk and full egg and 1 1/2c brown sugar and 1/2 c. white. They were sooooo chewy. I creamed the butter and sugars, then added the eggs and vanilla. I beat it well after adding the bread flour/leavening mixture to develop a little gluten and then added the oatmeal and raisins. Also, they could use more cinnamon and maybe a pinch of nutmeg to spice it up a tad. Great recipe! Thanks!

Navy Bean Soup I

I did not care for this soup. Since it could be a personal taste thing, I did not want to give it a bad review. It didn't have any off flavors, but just an overall taste I didn't like. The majority of the flavor I tasted was smokiness from the bacon, but little else. Also, You may want to cook the beans alone (in water) 1 1/2 hours before adding the other ingredients. Using tomatoes or other acidic things at the beginning, will make it so the beans will either not cook all the way through or it will take 8-12 hours to do so.

Lentil Soup III

I didn't care for this. I enjoy cumin, but not in this soup. Besides the cumin flavor, this was bland. Also, if you don't cook the lentils about 10 minutes in water before adding to this or any recipe that has salt or tomatoes, the beans remain undercooked unless you cook them all day in a crock pot.

Banana Cream Pie V

This is awesome! I used a Graham cracker crust and extra banana, but otherwise followed the recipe. For those that don't want raw eggs (meringue doesn't cook to 140 degrees with this method), just cook 4 whites with 1 cup of sugar over a double broiler until it's 140 and immediately whip as usual. This will stabilize the meringue also, so it doesn't weep. It's a tad sweeter than typical meringue, but awesome. Thanks for a great recipe!

Plantation Gingerbread

This is good. It's sweet, but not too much. The ginger flavor is good. It's very moist. I thought I had nutmeg, but didn't, so I'm sure it would have been great with that. Also, I used butter flavored shortening, since I can't have dairy while nursing and the texture was great with that as well. I look forward to making it again with the missing ingredient.

Banana Crumb Muffins

AMAZING! We made this with butter, not oil (butter is healthy guys, read Maker's Diet) and it was awesome! We used 1/2t of cinnamon and 2t of vanilla in the batter, otherwise left the recipe as is. The best thing about these is how light and airy they are (make sure you only stir until moistened & you'll get airy muffins)! The topping went so well with the lightness of the muffins. The sweetness was just right! A great departure from the typical, dense banana bread. Thanks for a great recipe!!!

Irish Chicken and Dumplings

This is the most amazing chicken and dumplins I've had!!! We're talking incredible! I did this on the stovetop the first few times and then in the crockpot. I like it better in the crockpot, since I could fit in all the dumplings mix. I cooked it 6 hours, adding the bisquick 40 minutes before it was ready. Some changes: I used 2c. chicken stock and 1c. water in place of 3c water. I also doubled the poultry seasoning and used 1/2 t. salt (stock has salt). I will increase the amount of chicken next time as well. I was only able to use 1/2 of the Bisquick mix, as my stock pot was too crowded. I didn't use carrots or peas. Thank you!!! This is our new family favorite!

Easiest Peanut Butter Fudge

My initial review for this was so/so, because it was too sweet and void of any real peanut butter taste. I made a second batch, but this time I used 2 1/4 c of brown sugar, 3 cups of powdered sugar and 1 1/2 cups of peanut butter and it's DIVINE! Perfectly sweet with lots of good peanut butter flavor! I also kneaded it about 7 times to ensure it was smooth and the powdered sugar was incorporated. The rating I'm giving is for the original recipe.

Ranch Dressing II

My Chili

Great base recipe, but it needed a few things to really fit the bill. I left out the tomato sauce and added 2 oz of tomato paste and 1/2 c. of beef broth instead. I added 1 1/2 t. of cumin, an extra clove of garlic, dash of worcheshire, 1/2 t. more salt, 2t. sugar and 1/4t cayenne. It's awesome!

This was ok, but the garlic was so overpowering I couldn't eat it. It was also too heavy on the cheese. Next time I'll halve the garlic and switch the quantities of cream and cheese.
