Shrimp Scampi Bake

Now this is shrimp scampi! I love the zing that the mustard gives this dish, it really adds something special. I added 1/4 c. grated parmesean cheese and 1/4 c. white wine to the sauce... the cheese seemed to keep the sauce from getting too thin. I served with herbed fettucini and a fresh salad for a special anniversary dinner for the hubby. He raved about the shrimp - definitely a keeper!

Pork Chops with Blue Cheese Gravy

Wow!!! I would give this ten stars if I could. This made the creamiest sauce. I felt like a gourmet chef! My hubby, who doesn't like blue cheese, said it was "Excellent". I made a few changes by added crumbled bacon, fresh chives and fresh cracked pepper to the gravy. So yummy that I actually brougt the leftovers with me to work so I can have it for lunch (something I never do!). This will be a staple in my recipe box. Thanks!

Six Spice Maple Cornish Hens

This recipe was just wonderful!!! We grilled them outside and my husband just couldn't stop raving about the flavor. Definitely adjust the pepper to your taste; I cut the red pepper in half and they still had a kick. One tip though, if you find that you've got them a little too spicy, heat up some more of the maple syrup and dip the chicken in it - it cuts the spice perfectly. I also added onion powder and a little salt. All in all, this was a great recipe that I'm definitely putting in my book!

Tangy Honey Glazed Ham

This recipe is just incredible! I have gotten so many compliments.... my husband even volunteered me to make this for his work party at Christmas! The first time I made it I stuck exactly to the recipe and it was very good. I made some changes the last time because of the ingredients I had on hand, and it still came out wonderfully. I added more pineapple juice and used both golden and dark brown sugars. I also added some cinnamon, onion and garlic powder. Don't be afraid to play with this recipe... it's very versatile!

Seafood Lasagna I

This was good, but was too dry. Next time I'll add the sauce to the seafood layers, not just on top. I think it would be good with spinach and mushrooms, as well.

Beef Potato House Pie Casserole

Great recipe! I also know this one as Shepherd's Pie. One in our family can't have cheese, so I made a nice serving of gravy from the drippings and spooned plenty over the meat layers. I used 1 lb. each hamburger and sausage, and added a few cloves garlic, 1 T. sage and a couple shakes of Tony's (creole seasoning) while browning meat. With these additions, I had no problems with flavor! There are so many variations you could make of this (adding veggies, soups, sour cream?) - I'll definitely make it again!

Easy Red Beans and Rice

This recipe has quite a good flavor, but I, like Michelle live in Louisiana - and this isn't creole red beans and rice. Like she said, leave out the tomatoes for the traditional version... I added plenty more garlic, a good dose of Tony's (a Louisiana must!), and jalepano-style Tabasco sauce. We like more rice here, as well. Still, this is a good recipe - and a great option when short on time. I'll make it again with the extras :).

Creamy Fruit Salad III

I usually make a citrus vinegrette with my fruit salad, but my nephew is allergic to both citrus and vinegar! I'm not fond of mayo and cool whip salads, either - needless to say I was pleased to find this recipe. The flavor of this salad is great - it doesn't overpower the fruit at all! I added 1 cup chopped nuts. I had some of the cream cheese mixture left over, so I used it as fruit dip the day after Thanksgiving. A real winner!

Pumpkin Fluff Dip

Wow!!! Super easy, and a huge hit for our fall party... I don't think I've ever had so many requests for a recipe. Most everyone preferred it with gingersnaps, but I'm a fan of plain 'ole graham crackers.

Apple Dumplings I

This recipe is wonderful!! I took it to a women's meeting at the church and it got rave reviews. I used Pillsbury cinnamon and sugar flakey bisquits (eliminates the need to season apples before wrapping)and baked the apples 10 min before pouring on the sauce. I also eliminated the water as suggested by other reviews, and added 1/2 cup pecans to the sauce (note: the pecans taste wonderful with this, but add considerable work to washing the dish... it was worth it!) Thanks Carol, for a wonderful dish!

Carnation® Quiche Lorraine

This is by far the most popular recipe I've served to family and friends.... and so versatile! I use diced ham instead of bacon when pressed for time, and ground sausage with some sage makes it really hearty. I also throw in veggies whenever I'm in the mood - spinach and mushrooms are great. I've also substituted 1/2 cup Cheddar for some of the Swiss - it adds color and a little "bite" to the flavor (be sure you keep at least 1 cup of the Swiss, I've discovered that reducing below that alters the texture too much). Basically, you can suit whatever 'food mood' you encounter with this amazing recipe!!

Caramel Apple Pork Chops

This recipe is very good! The pork chops are a little bland though, so I now season them first with some S&P and allspice. I also double the sauce, and reserve some to spoon over ice cream for dessert... Yummy!

Champagne Shrimp and Pasta

This is so quick and easy! I made it for a candlelight dinner and wasn't too tired from cooking to enjoy the meal... and my date was quite impressed as well. Great with crusty bread and remaining champagne.
