Veggie Lasagna Florentine

Reviewed: Jul. 19, 2013
Superb! Best lasagna ever! I mostly followed the recipe, and am happy that it was a bit versatile to use what I had available. I used extra fresh garlic, diced canned tomatoes and accidentally forgot the tomato paste, shredded carrot in place of brown sugar, lots of fresh finely chopped mushrooms, and an extra large shredded yellow squash in place of zucchini, and did not add salt. I skipped step with the mixer to save time, so sauce was chunky. I simplified into 2 layers -- sauce, noodles, sauce, cottage cheese mixture, noodles, cheese, basil. I really think all the seasonings is what pulled it together. Everything fit perfectly in my 11 x 14 inch pan. This is good! Thank you for recipe!

Awesome Ham Pasta Salad

Reviewed: Sep. 7, 2012
I have made this at least ten times. We love it! It's a great make-ahead dish. I did make a few changes. The dressing is very rich. I compensate by adding an orange bell pepper, way more tomatoes, and a little extra pasta. I'm happy to use three or more cups of tomatoes. The chopping does take awhile, but it is a large batch of pasta salad that keeps for days. To speed things up, I spin the tomatoes in a salad spinner to get the seeds out, use a chopper for the peppers, and grate the onion.

Vietnamese Fresh Spring Rolls

Reviewed: Aug. 22, 2011
These were so good! I've always loved them in resturaunts, but assumed they were difficult to make. Now I know they aren't! I did use pre-cooked shrimp and dipping sauce from a jar, but used the best quality that I could find. This made it a quick and easy, fresh treat. My husband didn't like the mint, but they'd still be great without it.

RWOP Finalist: Salmon Wrapped in Pastry with Cucumber Sauce

Reviewed: Aug. 20, 2011
This was quite good! A great way to use up leftovers. I didn't make the cucumber sauce, so I increased the cream cheese in the filling and added sharp cheddar. I also used dried herbs, including lemon pepper instead of lemon zest. Do follow the recomendation to taste the filling and adjust. I decided to add some celery salt. It turned into enough filling for two pastries. It is rich, so serving with sliced tomatoes was ideal. I'll be saving this one!

Baked Salmon II

Reviewed: Aug. 17, 2011
I am delighted that this turned out great! I've been trying to cook salmon for years because it is my husband's favorite. And finally, for the first time, it was good!! I didn't expect my kids to eat it, I didn't even put any on their plates. But, I let them try mine and they filled up on it! It was quick and easy. I used all dried herbs for convenience and only let it marinate for about 20 mins. Might have to fix this every week :)

Luscious Spinach Artichoke Dip

Reviewed: Aug. 17, 2011
I just made a double batch of this and was disappointed. I used a little extra cream cheese and parmesan instead of romano. I thought it was bland and dry. I wish I'd doubled the cream sauce and added salt, pepper, and onion powder. It might help to top with diced tomatoes.

Homemade Chewy Granola Bars

Reviewed: Apr. 16, 2011
This has been my most-used recipe from this site for the last year. Love it! Started making these as a way to use up those bucket-loads of WIC cereal. I like that it is versatile to suit what I have on hand. I too use honey in place of corn syrup. 11 packs of instant oatmeal makes a double batch. And I use coconut in place of wheat germ, so good! They freeze well, too, just layer wax paper between them.
