Awesome Ham Pasta Salad
I have made this at least ten times. We love it! It's a great make-ahead dish. I did make a few changes. The dressing is very rich. I compensate by adding an orange bell pepper, way more tomatoes, and a little extra pasta. I'm happy to use three or more cups of tomatoes. The chopping does take awhile, but it is a large batch of pasta salad that keeps for days. To speed things up, I spin the tomatoes in a salad spinner to get the seeds out, use a chopper for the peppers, and grate the onion.

Vietnamese Fresh Spring Rolls
These were so good! I've always loved them in resturaunts, but assumed they were difficult to make. Now I know they aren't! I did use pre-cooked shrimp and dipping sauce from a jar, but used the best quality that I could find. This made it a quick and easy, fresh treat. My husband didn't like the mint, but they'd still be great without it.

Baked Salmon II
I am delighted that this turned out great! I've been trying to cook salmon for years because it is my husband's favorite. And finally, for the first time, it was good!! I didn't expect my kids to eat it, I didn't even put any on their plates. But, I let them try mine and they filled up on it! It was quick and easy. I used all dried herbs for convenience and only let it marinate for about 20 mins. Might have to fix this every week :)
