Tonya's Terrific Sloppy Joes

Haven't tried the recipe yet but wanted to leave my own hint for great sloppy joe eating -- use hot dog buns instead of the traditional burger buns. So much easier to eat, all the joe stays in the bun and we top it off with a sprinkle of shredded cheddar and a spoonful of dill relish for even more fun and deliciousness!

Lasagna Roll Ups

I've been making these for years! Use any combination of lasagna ingredients you like, they'll be delicious. One of the advantages for a family is that each person can have a roll up made just they way they like it.

Spaghetti Sauce

This very close to the James Beard recipe that I have used for nearly 40 years. His version doesn't use oregano or green onion, adds fresh garlic and reduces the tomatoes before adding the spices. If you omit the "Italian" spices and use chili powder and cumin, adding a can of diced green chili peppers to the tomatoes, you will also have a good red sauce for Mexican dishes.

Best Spanish Rice

I use a similar recipe. The key ingredient is using a salsa that you already know you like. I also add a half teaspoon of cumin and a half teaspoon of salt if I have used the liquid from cooking chicken instead of packaged broth. Using chicken broth is best but it turns out very well even if you use only plain water. I heat the liquid, salsa and seasonings while I'm browning the rice, then add the rice to the simmering liquid, cover, reduce heat and cook for 20 minutes.
